Great video.. I will definitely be trying this way .. I have a portable asmoker grill people in my group did a 10lb brisket.. but I will try ur method I don't have time for 13 hours.. plus I have a 4 pound hopper ... question my daily is only 200/250/300 .. what u think I should start and finishing time ?? .. thanks 💪🏾 looks good

You didn’t show wrapping it. Did you just cover the top of the tray with foil? Or did you use the butcher paper? Mine is at the 5hr mark and is at 168 internal with foil over the tray. Not sure if I was supposed to wrap it in butcher paper

I see a lot of guys in this Facebook group I’m in start at 300 For 2-3 hours then crank it up to 325 and wrap for 2 hours then rest it for 4 hours Seems it comes out perfect
