the food is so elegant, intricate and has the air of gourmet sophistication, umm if I am able to afford the night and food there, I would love to try their signature dishes, I want to experience the layers of aroma and tastes and food craftsmanship 🤗

部下は帽子被ってるのに、料理長は被らないんですね。上は被らなくていい、みたいな古い風習ですかね？私も調理の仕事ですが、上に立つからこそきちんとしようと心がけてます。素晴らしい仕事されてるのに、そこだけが残念でした。

Japanese Soup is boring. They should learn from Chinese Steam Soup.

Just stick with Chinese style soup since you wouldn't understand nor appreciate most elegant simple preparation of Japanese broth. Japanese food is for people with discriminating and impeccable taste where you are required to tell the difference between mountful of flavor and seasoning verses minimal addition of aromatics but to support main ingredient in season.
