Milk Upma, also known as Rava Upma, is a comforting South Indian breakfast dish made with semolina (rava). It’s a staple in Indian homes, restaurants, and tiffin centers. The combination of roasted semolina, tempered spices, and creamy milk creates a delightful texture and flavor.
Ingredients:
1 cup semolina (rava)
2 tbsp oil
1 tsp urad dal + 1 tsp chana dal
½ tsp mustard seeds
½ tsp cumin seeds
3 green chilies (chopped)
2 dry round red chilies(optional)
1 stalk curry leaves
1 cup milk+1 cup thin coconut milk+ 1 cup water
2 tbsp ghee
A handful of fried cashew nut halves
Tips and Tricks:
Choosing Rava: Opt for double-roasted rava for a fluffy and non-sticky upma.
Enhance Flavor: Add peanuts, cashews, or mixed vegetables to elevate the taste.
Serving: Enjoy Milk Upma with peanut podi, idli podi, coconut chutney, or pickle.
Kid-Friendly: For kids, sprinkle a dash of sugar and ghee on top to balance the heat from the chilies.
