While the rest of the world goes through a shortage, Edmond Fallot, the oldest Dijon mustard factory in France, is unaffected because it uses 100% French mustard seed from the region. Using those local mustard seeds, it produces many varieties from old-fashioned Dijon to blackcurrant and basil-flavored mustards.

It's impressive that they held a family business for three generations so successfully. They really stuck to their vision and quality of their products.

Was thinking the same thing. But, you can notice they stayed up with the times and modernized the factory without impacting the essence of their traditional production methods.

Eh, I don't know how impressive it is. Rare but eventually they will have to expand or be eaten up. There are only winners or losers in the market.

A few years ago James Martin did a show where drove around in a Citroen 2CV around France and did regional recipes like hero Floyd. He went to this exact same factory and the guy demonstrated to him the mortar and pestle method he does in the video, then of course James makes a mustard ingredient dish outside the factory. Love it

Funny because I buy Mailles Dijon mustard since years but I always thought it would be consider a cheap/low-quality product in 🇫🇷 ! I just recently realized lots of French use it ! Cheers from San Diego California

Mailles is not a high end product but it's not bad either (you can find much much worse). It makes for a good mustard to use daily. We buy better mustards such as this one when we want to celebrate something for example.

@@Ealwyen i do confirm ; Maille is the every day mustard that is on our tables "tous les jours". You can find it everywhere in the supermarkets here. The Fallot is the rolls one & it's very good.
