+Chrisbajs Honestly, Jiro quality is dropping like a stone. Their rating on Tabelog (basically Japanese version of Yelp with a ton harsh critics) dropped from 4.8/5 to 4.2. Become a regular customer at any sushi restaurant in Tokyo and they can serve you higher quality than what they serve to foreign tourists.

+moderateatberkeley .. There quality hasn't dropped at all. Jiro got his Michelin stars because of his consistency. You will get the same thing everytime. Problem is 1. Quality of fish and abundance of it is at its lowest of all time. 2. Now that he is Nationally more famous than ever, he is open to much more criticism and people coming just to critique his Sushi.. And being that competition is as fierce as ever for top quality fish, it is hard to be as consistent as he used to be. It doesn't mean the quality of his Sushi is any worse, just that he is much more limited in his menu and must charge more and more which can turn people off.

+petecabrina It was blowfish (a.k.a. pufferfish) which has poisonous sacs. If the chef doesn't slice it correctly and you eat some of the poison, you will die. And yes, people in Japan do sometimes die from eating blowfish sashimi. Especially when the sushi chef's hands are busy with Ms. Krobopple in the backseat of the car and his assistant has to prepare it from a how-to book. I liked his response though - "sometimes". ;)

yeah, on reddit someone posted a video of Jiro and his son etc.. and people have eaten there and said this. (mainly because it is always booked) alot of people recommended going to his sons restaurant.

+StepHop5 Thank you for clarifying. I also did a bit of research and found an article on business insider and it basically clarifies everything. You don't need a Japanese tour guide to get a reservation, just someone who speaks Japanese. I can tell that this is not to keep people out, it is just to make sure that every customer has the same experience because Jiro and his son only speak Japanese. So if you go with someone who speaks Japanese, then you can interact with the chefs, rather than be left out of the conversation (I heard that the chefs do talk with the customers). I used to work for his protege on Rodeo Drive and can say that a lot of the the price you pay goes to the astronomical rent of the prestigious location. Which is probably why you see some great sushi chefs open restaurants in mini malls etc. in order to give the customer better value without compromising on ingredients (Nozawa, N/Naka etc.).

Much respect for Masa Takayama, but I have a tip to share with diners who daydream about having a truly stellar omakase experience ... you dont need to make a pilgrimage to a major city and pay an arm and a leg to a celebrity chef, because celebrity comes at a premium price. My advice for ferreting out decent omakase is to visit a lot of different restaurants in your region on slow days, during off peak hours, when the chefs are not in the weeds during the height of service ... go when it's relatively quiet, and then discreetly make some light conversation with the chefs behind the counter (provided they're friendly and amenable). Sometimes you'll gain traction and often you wont, but after a while you'll eventually find a place that you like, with a friendly chef that you resonate with, whose culinary style matches your dining preferences, and who actually loves their craft rather than simply going though the motions. Chefs who care are the ones who like to keep things changing (to stave off boredom), and who always have something seasonal and/or off-menu squirreled away to spring on their interested and respectful regulars. Once you find and establish a rapport with a chef like that, your omakase lifeline is pretty much secured. The bottom line is that although there are a lot of burned out chefs out there who simply go though the motions of mindlessly making endless maki rolls and sushi a/b for the hoi polloi during lunch and dinner rush, there are still some special people out there to be found who do not yet command celebrity prices, who truly love their craft and are happy to make the acquaintance of people who understand and appreciate same ... if you put in the effort to find them, the reward is worth it. It also helps to educate yourself - learn knife technique, learn the different fish and try cooking each of them, learn the history of sushi and it's different styles. The more you know, the easier it is to spot and appreciate quality and skill when you see it.

That's what the sushi feels like. There are matters, substances within a piece of fish that you just can't describe, substances that isn't actually a predefined taste like sour, sweet, bitter, salty, spicy, but these substances creates some sort of reaction within your mouth. What you use to describe something that nobody knows what it is? By correct scientific definition, it tastes like a certain kind of protein and amino acid within the fish, but nobody describes it that way, get a life.

Just a quick tip for the future, when thanking someone formally in Japanese you're supposed to say "arigatou gozaimasu" like Masa does. Leaving out the "gozaimasu" is what you would do when thanking close friends in informal situations. It's like a verbal way to show respect.

This video was better cus the Chef himself did a lot of the food critic's job by talking about the origins, ideas, and taste of the food. The other video mentioned by Perry had a Japanese chef who didn't have much to say and there was just minutes of no content "Mmmm this is so good and creamy and nice" over and over again LOL. Her fucking voice annoys me.
That's truly beautiful. For a person to master an art and love it with all of his heart like that is truly amazing. I would love to eat there.

The chef was clearly a good sport about it, and it’s a bit condescending to assume that most non-native speakers won’t “get” sarcasm. Mind you, there are plenty of “non-native” speakers who have a far superior command over the language than “native” speakers. This instinctual ‘othering’ has got to stop.

It's a very interesting way to eat. By the end of the meal you're mean to be satiated, not stuffed. So generally you leave having had a generally more healthy meal curated by the chef. The chef chooses which fish is at it's best and then guides you through a progression of those fish so that you're tasting them to their fullest and not overwhelming your palette. It can be expensive, but if you ever have the opportunity to experience a omakase meal, it's quite an experience.
