Yes, Bourdain has NEVER claimed to be a world renown chef like say, Eric Ripert, but he is classically trained, and has worked at some excellent restaurants. He knows what he's talking about, and I bought his book, Appetites. The recipes are easy to follow, and are terrific.

R.I.P., Mr. Bourdain. I would have loved to know his opinion on vegan chefs. The picture with the boar's head on the platter looked kind of disrespectful to me. He seemed to be a very respectful person so I would have liked to know what he thought of animals having to die (mostly in traumatic circumstances) to be eaten.

De Borah i think you will be disappointed if you read his book A Cook's Tour when you Learn of his view points on vegan cooking. But he is respectful and grateful for animals used in his food.
