Bourdain mentioned the bitter component in the Philippines. Very true. We have dishes like 'papaitan' where bile is literally the main ingredient in the dish, and we love the vegetable ampalaya (bitter gourd) which is excellent in combating symptoms of diabetes.

I totally enjoyed the conversation at the end. It touches base on how Diverse the tool "Goldie Locks Zone" is in reality. How water boils differently at different altitudes, our liquid water sits in a zone starting under it, and stretching high into the sky(depending on the number of total molecules balancing across the center of mass). It would be in a completely different state without this region being "Goldie Locks". There are so many things in reality that require a balanced environment like that. The Electrons line up in a boundary held together by Electromagnetic regions.

From the age of 7, I was raised in the countryside and the first time I saw a pig slaughtered, I felt like shit for eating meat. Worse than that, I saw the pig as a friend (laugh all you want, it's all right) so it was traumatizing moment for a city born 7 year old boy. Back then, vegetarianism or veganism were mostly unknown, so although I still eat meat, I hate people who love the eat a steak but won't eat tripe or blood pudding because it's deem disgusting. And I eat small amounts of meat, a couple of times a week and preferably from sustainable sources. Bourdain was one of a dying breed. Free thinker, honest, f*** the establishment, amazing and a true champion of food discovery.

I recognize the professor of nutrition. She came out in a few moments in Spurlock's classic film, Super Size Me!! The intertwining moments with Bourdain are pretty interesting as well. I watched his entire No Reservations series and now a fan of Parts Unknown.

If you worked as a chef in restaurant, a very fast-paced restaurant like what Bourdain did. You will get scolded if they found you using thermometer to check whether the steak is medium-rare or not. Their advice is basically like every homecook moms, "put your finger on that steak, check the meat." That's all. It's a play of your senses and not depending on technology.

I didn't realize you could tell when a steak is ready just by hearing it on the pan. I've seen them test it with their finger on Hell's Kitchen. I've also seen Marco Pierre White say that you can tell by looking at the juices just appearing on the surface of the steak.

In Miyazaki prefecture, it's really peaceful and quiet, but in general, the Japanese people have a more "strict" view on success and how well individuals should perform, making kids and adults alike more stressed and having a greater need to be accepted by society or simply people around them. (neighbors, colleges, classmates, etc.)

Odin Lowe Actually that's an occidental perspective, their culture is very focused on discipline and exellence oriented, but as well, is not necessarily stressful, since the successes is also heavily praised, as well the respect to not be insulting to someone for not surpassing your expectations, also the shintoism helps as a relaxation, the japanese religions are very focused on minimal and tranquil philosophies of life. The thing is, since large cities like Tokyo are overpopulated is easy to measure Japan by them, but in recent years it emerged a whole culture of coping with stress since the appearence of Karoshi, now holidays are obligatory, the maximum hours of school and work are stablished and there's a penalty for exceeding them.

No it definitely is stressful. They work 12 hours a day in japan. Basically all they do is work whether in city or not. They don't have free time like we do to enjoy the day and relax or sit here and watch youtube lol.

No one listen to all the Eugene haters! He's awesome and his place there, aside from comedy, was made pretty clear when he asked about the folded protein. He seems on par with the sort of people who might be listening who aren't scientists--smart, but not familiar with some of the details most people had to go to college to learn.

I'd like Anthony to bake a loaf of bread or a cake with 2 knives and 2 heavy bottomed pots and pans. As a pastry chef/ baker if that was the only pieces of equipment I had at my disposal I wouldn't really be able to make anything! Equipment is important in the culinary world and he 's definitely underplaying it's importance!

What Neil and many Americans think is the image of Buddha in East Asia -the chubby and jolly man- is actually a separate figurative god. In Japan, he known to be one of seven gods who bring good luck; the chubby god of course, bringing an abundance of food. Some Asian merchant probably didn't know any better words to communicate what a souvenir was to a western tourist, and the rest is history.

I don’t think the quality of nutrition necessarily has to do with “how long people live” (although that’s certainly a factor), but more so in the overall health of the people (is their a lack of diabetes, heart disease, allergies, neurological disorders, and so forth). I wonder if that’s ever been studied.

We have been making great efforts in making materials of marginal food value tasty and even addictive. Imagine how different our world would be if similar efforts were instead spent on making items with the highest food values more appealing and then pushing them out to us with marketing campaigns.
