I like to think that the Legendary Godzilla is a child who went into stasis/hibernation where his metabolism stopped or slowed dramatically and he stopped growing and ageing. He slept through the apparent extinction of his species (possibly caused by Ghidorah) and awoke still a growing child. EDIT: Apparently Godzilla's kind was mostly wiped out by the MUTO Prime, so replace Ghidorah by MUTO Prime

I think Godzilla's growth is much easier to account for than Kong's growth. Godzilla feeds off radiation, he was dormant for several decades so probably lost a lot of body mass while in hibernation, and during that time the earth has become more radioactive due to mankind, as mentioned by Sally Hawkings in Godzilla 2014. Now that he has been awake for 5 years and feeding on radiation he is growing. Kong however feeds on other animals, fish, vegetation and so on, like a normal prime-mate. He would have to eat an ENORMOUS amount of food to grow from 100ft to 300ft in 40 years, and all of it within the confines of Skull Island. Probably something else will account for Kong's growth like maybe the increased radiation has mutated him a bit. Cant wait to see where they go with it.

You’re right, Kong’s growth makes NO sense, basically, he would have to grow over 3 times his size to even come close to Godzilla’s size, and even if he were an adolescent that kind of growth from adolescence to adulthood is truly ridiculous. Kong is a primate, no primate (Not even Kong) could believably grow that much, it’s like having a human grow from 1.5 meters (5 ft) as a young adolescent to over 4.5 meters (15 ft) as an adult, even twice the size would be exaggerated, at best, a Human would reach 1.9 meters (6’3 feet) tall.

For the size shift, it could also be that godzilla is in a more active status. Until the Mutos, he'd only had one relatively recent battle (In the 50's during Awakening), and that wasn't anything that really challenged him there. His fight with the Mutos might have shifted him from a largely dormant state to one where he's putting on bulk and building up for another fight.
