Yes, it should still be possible, but you have to tell the visa officer about your timeline and request that they expedite the printing of your visa.

Hello Ben. My program start date on my I-20 is 23rd of August and classes starts 29th of august. My interview is scheduled on 25th of august and I have an extension letter from my school already. The visa officer will not issue your visa if you program start date has already passed. You either need an earlier appointment or a later program start date.
