I cook a lot. I watch many videos by a plethora of people for inspiration. Chef John's videos are not only entertaining but through him I can fake that I am a wizard in the kitchen now and then. I return over and over to his videos. He's part of my You Tube University course. His homemade 'Ritz" crackers are simply a cheese heaven cookie. Now make your own ricotta for that cracker since Chef John taught us how easy that is and top it with whatever you love. Yes, he inspires me.

I know some folks dismiss burgers as 'junk food' but, as part of a balanced diet, a burger in a bun is simply a variety of beef sandwich with salad. Living on a Macdonald's diet is something else ​- but these looked wholesome and nourishing.

I love Loco Moco! A lot of places try to fill you up with extra rice, but really it should be balanced. Also, eat it how "you" want! If you want it sliced and eaten that way, or chopped, mixed and eaten with a spoon, go for it! Chopped and mixed was how the gentleman who taught this recipe to me used to like his. His wife liked her's traditional.

He is a yellow budgie, and he acts pretty loco sometimes, running back and forth on his perch, bobbing his head up and down, and squawking loudly. The Loco Moco is the ULTIMATE comfort primo breakfast or any time meal!♡ Yes, the patty must have that crunchy crust and a runny egg or two (best as over-easy, salt, pepper, garlic powder), but this needs more rice as a bed (2:1 to patty) and lots more brown gravy. McCormick brown gravy mix is what is what most people use, but this gravy looks yummy, minus the sugar. His sweeter gravy here is kinda similar to a demi-glace commonly served on Japanese hamburger dishes.

My favorite burger is still a Sasebo burger. When I was working on ships we would regularly make port at the naval base in Sasebo Japan. My favorite was Log Kit. Nice wide thin patty, home made buns, crisp lettuce and tomato, thick bacon, Japanese mayo and a fried red yolk egg. Freaking delicious. Sweeter than a typical American burger but very very good.
