The acceleration of EV vehicles will result in more crashes, deaths and higher insurance premiums. Why are EV car makers obsessed with boy racing as a selling point that wastes energy? The other result is lower speed limits along with the fines.

What you are pointing out is more related to how a the person drives rather than the ability of the car to go faster. The fact that the car can reach 100 km/h in less than 2 secs doesn’t mean you need to drive that fast. Is more of a selling point, to show the power and the capabilities of the car

If yes, are they old fashion, afraid of embracing the future, and not willing to accept changes just like you did?

No it won't. EVs, unlike IC cars can have automatic sensors and cut outs integral to their systems which anticipate crashes before they occur, and modify driver control as needed.
