In Austria we love our horseradish. The best thing is when you smell a fresh portion and you feel the punch in your nose and you start to tear up because of it. An awesome spread: curd cheese, horse radish, salt and pepper. Super tasty

i am a wild game butcher up in canada. one of the things i love to pair with my elk is whiskey mustard. i also take whole sirloin tips and seam them out. i separate the eye, the sandwhich steak of fast fry steak and the loose flap that connects and goes around the bone. i create a pouch out of the piece from around the bone and stuff with garlic, mustard and onions, tie it up and slow roast.

I use freshly hunted Axis Deer venison ( a super lean protein ) mixed with trimmings from dry aged Beef rib eye . I try going for an 80 % lean and 20 % fat patty . I like my burgers on a Brioche bun . With mustard , pickle , onion and a slice of Wisconsin Cheddar . Love the videos , guys . Keep them up .

Welcome back guys :) If Alaska wasn't so far from NYC, I'd try to send you some moose or caribou cuts to try out. They are both insanely lean, so I personally grind them with bacon or lard, but sometimes you also need to cover up some super gamey taste since it is wild game and that helps too.

Hunters have know for a while that Elk may be the best tasting red meat, period. Just enough of the subtle gamey flavor common (and often overwhelming) in deer or lamb but with far more far fat than deer. We always mix beef fat into the grind, but not much. Shoot for 8-10% fat content.
