Went I went vegan, I went giant salad vegan. I stopped wasting and throwing out veg, to using and buying lots of veg. My salads are for dinner and include beans, seeds, avocados, seaweed, nutritional yeast and many types of veg. Nothing gets tossed out.

I also like stuff in salads that other people cook... as long as one has good teeth... e.g. good, fresh fennel, diced, is a nice addition to salad, actually it tastes much nicer raw than cooked, to me anyway. Really good quality olives, without much salt or additives, and naturally ripened, are also a nice addition. And I never do "dressing", it's a waste of time for me... also I don't want to make things more acidic unnecessarily. I might add a bit of a good olive oil.

I worked at a great farm to table restaurant. Her salads were epic. She added different lettuces, cabbages, and fresh herbs. Most had two dressings, and crunchy seasoned nuts, dried fruits, cornbread croutons on some of them , beans. They were all so good and in the spring we had sunflower sprouts instead of regular sprouts an amazing flavor.

Salad temperature also is a thing. Some people hate them chilled or just cold. Either let it warm up to room temp or add hot ingredients and mix. ❤ Also: bite-size. Do whatever you love, you don't have to chew on large leaves.

This is, easily, one of the most inspiring and immediately useful vids I've watched in a VERY long time. It will be immensely helpful as I continue to lose weight (49.1lbs so far) and become what I call, vibrantly vigorous health. Best tip: take the time to make your own dressing. I’m not vegan, but my husband and I eat salads 5 days per week for lunch. Our salads typically are: red cabbage, spinach, kale, carrots, cherry tomatoes, sugar snap peas, pistachios, black beans, hemp hearts, olives, olive oil, aged (thick!) balsamic vinegar, salt, pepper, and turmeric powder. We do mix it up, and he sometimes has lunch meat on his. Or we’ll add avocado. Or a different green. I love them and look forward to them so much!

I love adding marinated baked tofu to my salads. I make a "bacon" flavored marinade for it and it's amazing. Makes me eager to eat my salad. Agree 100% with all the recommendations - texture, color, flavor are all key. Also, try adding pickled red onion to your salad. Flavor bomb. And I have a pre-made seed-mix that I sprinkle on all my salads: hemp, sunflower, chia, sesame, flax, pumpkin.

Just purchased the book and already planning to prep some of the crunchy toppers from the book. I used to love salads when I was a kid. My family made our own ranch dressing and we used veggies from the garden. I think I fell into the diet culture boring salads as an adult and lost interest in them or was afraid of eating ones that had "too many calories" if it looked good. Meal planning for next week and will incorporate two days for salads :)

I developed an allergy to lettuce last year. It's been a real struggle! I've found outbrecently though that i can seemingly eat all chicory plants without issue! I've found arugula, shaved brussel sprouts and curly endive to make a yummy green salad mix for me.

I love all these suggestions and find that some kind of creamy dressing is what really makes my salad satisfying. I make my own with either cashews, tahini, peanut butter, walnut, pumpkin seeds or avocado. Any seed or nut butter blended up with other ingredients for a balance of tangy, creamy, sweet, salty, aromatic and spicy if desired. ✌🏻💚

Thank you! It is easy to fall into a pattern with salads that becomes boring. This is a great refresher on making them fun again. We belong to a CSA, and receive amazing fresh produce every week. It is a great way to try new things that we would not have normally bought at the farmer's market.

Thankyou for this, I am in my element making soups, stews etc. but when it comes to salads the brakes go on! I find the dressings intimidating and am just not real creative in this realm. Being single doesn't help either as salad fixings can go bad quickly and hard to use them up without eating the same thing everyday. I'm french, and the ebook shape works so well for me as i sometimes need to translate some product names ! The promo code was a plus of couse, but your concept of "blocs" paired with the salad is really motivating ! Eventhough we have great food here, it is a bit more delicate when it comes to vegan food as i'm in a country of butter/cream/cheese/milk LOVERS. Moreover, "blocs strategy" enables swaps and local adjustements. i'm still new to the vegan world : i have a vegan mom, but i'm more of a flexitarian person, willing to go on the vegan side as much as possible while living with a non-vegan boyfriend, and, once more, "bloc strategy" is amazing for that too. I'm vegan but I literally never eat salads. Mainly I eat soups to avoid cooking oils. Basically make vegetable soups w/ kale, lentils, arugula, corn, celery, onion, tomatoes, carrots, etc....I like the taste of some vegetables that I dislike like for example celery in the soup form weirdly enough...Though I do want to try a salad w/ chickpeas that sounds good...Considering I only eat chickpeas in the form of hummus...This video is high quality production and information...great vid

Ever since I started making my own salads 60+ years ago in my late teens, I've always made my own dressings, never from a recipe. The only drawback was/is that I've always liked them so much that my salads tend to be dressing-logged, well so my friends complain. Think I'll surprise them and use some of your dressing recipes. This is good timing as we're now heading into spring which is mega salad time for me.

I just whipped myself up a salad for lunch using your tahini dressing recipe and paired it with red butter lettuce and little gem, cucumbers and red peppers from my garden, sun-dried tomatoes (the chewiness from these is a game changer!), falafel from Trader Joe's, and some za'atar sprinkled over the whole thing. I freaking LOVE salads. On a whim recently, I noticed that I had a ton of carrot tops. Yup. Minced up they added a lovely herby note to my huge kale salad. Beet greens rock, too. I also toast sunflower seeds or hazelnuts more nowadays as they are less water intense crops. You can also use cooked beans that you spin down with a bit of lemon juice and miso / sesame oil and it can be a salad dressing, too. Thank you for the additional tools for my toolbox, Miss Nisha!

Love this. Great tips. I personally love chopped raw nuts and seeds in my salad. Tried toasted & didn’t seem to add a difference to taste. I also love to add fresh herbs (basil, thyme, parsley). So good. Or, add leftover veg that had been cooked with lots of aromatics. Once there is salty, sweet, herby, crunchy all mixed in, I don’t even need salad dressing.

I love salads, a lot! The one I'm enjoying at the moment is baked baby potatoes, grilled tomatoes, red kidney beans with raw bell peppers (all of them), radish, cucumber, and red onion. Then adding avocado and sauerkraut gives a really fresh meal. My dressing is very simple: extra olive oil, apple cider vinegar with salt. I eat this but then I have a rainbow sandwich that includes other raw ingredients.

I love all your great tips and definitely need to incorporate more of the grains into my salad. I eat a very large salad everyday as one of my main meals. I always add thinly sliced cabbage for crunch, and I’ll grate fresh broccoli, cut carrots, and always make my own dressing. Sometimes I simply add the dressing ingredients into the salad then toss. Today I did mix a tahini dressing. But one favorite is after adding spices like salt, crushed red pepper and garlic, I sprinkle on Parmesan cheese, then drizzle maple syrup and balsamic vinegar and toss. The Parm with the maple syrup is so good, it’s one of my regular dressings. I like adding crispy tofu or chickpeas, and will even toss in some pasta. I’m not crazy about quinoa but like the idea of roasting it for salads. I’ve just started using farro beans but only to grind to make a pizza crust, I haven’t cooked it as a bean, I need to know how best to cook those and prepare. I’m definitely going to check your salad ebook. Thank you 🌟

I love mixed raw veg and fruit and other… aka salad… with homemade sauce over and over. Many of mine are delicious And no added fats. Love them…glad you like them too.

Eat salads everyday- So versatile- easy to throw together- filling and I get good nutrients from them- I love a wide variety -through my 20s, I thought salads were the boring lettuce, tomato and cucumber variety…About 20 years ago, Big Salads came to our area and I got create in trying different variety of lettuces, other veggies, seeds…Now I make mine at home 😁

I use to make a salad all the time with a tahini ranch and oven roasted carrots and beets. Tahini and maple syrup is an addicting base. Basically add those to anything and it's delicious. Especially with bitter greens like radicchio.

tahini based dressings are my LOVE My go to is basically tahini, soy sauce and rice vinegar 😂 Or a tahini yogurt sauce....so good 🥺🥺🥺
