From what I can tell (I’ve never played education edition before) It’s basically just the same thing as regular edu edition. Just with a chinese title screen

That was the real loading bar at some point. I played the game (pocket/bedrock edition) since 2017 and I remember when the loading bar changed to this at version 1.14 I believe. I think they changed it again from this to the latest loading screen sometime recently. The fake minecraft you played is probably one of those stolen copies that manages to slip it's way into the play store and is just an edited version of normal minecraft.
