In this video I mentioned leaving a 1 inch head spacing for the tomatoes, however it should be a 1/2 in head spacing. After the jars cooled, I turned them upside for a minute to allow the water redistribute throughout the jar. Easy Peasy!

I set my dehydrator up at the same time, and place my skins on the trays and all is done at once.

My dehydration station:-) is set up outside! I make my own version of Jane's crazy mixed up salt. Minus the salt! But the thought of how many tomato skins it would take boggles my mind!🙌

I purchased a water bath, and a pressure canner. Found the jars at Walmart, and lids; I kept going when they were about to stock the shelfs, it differs from each Walmart. Now I need the courage to DO IT. Mrs H. thank you for sharing your God given gift/talent with us.

Wrap a small hand towel around the center jar and it will keep it from moving around so it won't dance around.

I just watched a homestead gal make sauce…she cored, sliced into 4’s and cooked them soft, then put into her Vita blender..skins, seeds and all, and blend that all up till smooth. Helps thicken the sauce, and a quick way to get your sauce done. Holy cow…much faster way of doing it if you have a lot of tomatoes to get done. Thank you for your lessons, Cindy

Great idea with the green ones. I used to make "Fire Balls" with my green cherry tomatoes. I gave the recipe to a friend and she won first price at the county fair. :o)

As for as the snakes go, my parents always told us to put SUPHER AROUND YOUR HOUSE, 'cause they can't stand the smell, therefore, ALAS, they find other places to dwell. I was small, but still remember. Since, when I started my adult life, it still worked for us. GOD BLESS YOU AND YOURS IN EVERY THING YOU DO.

Love diced fresh tomatoes with okra and diced onions boiled together. So good as a side dish. I know some folks don't like boiled okra but I do. Yummmmy

You can use your pressure canner as a water bath as well , just don't lock down the top lid as you boil and add at least an inch of water over the top of your jars .

Loved this one, had many many many meals of boiled potatoes with the jackets still on (usually the taters that’s too small for peeling) and stewed tomatoes just like you just canned!! Surprisingly it’s still a favorite meal anytime for me. Thanks for sharing with us and bringing up GOOD memories.👍👍👏🏻👏🏻👏🏻👏🏻

My kids HATED stewed tomatoes! I tried to teach eat your tablespoonful. If you complain I give you another spoonful. My son never broke! My daughter eats all sorts of great things!

I love this channel SO MUCH! This is exactly the canning project I'm planning to do this week! Yesterday, I made some pineapple jam, using your recipe and methods! Can't wait to try it soon! Two days earlier, I made my VERY FIRST batch of New York Style sesame bagels (they came out perfectly!) plus I made a loaf of artisan bread in my new 4 quart cast iron pot, and that also came out beautifully! Now that I'm in my 60's and retired, I FINALLY have the time to learn and do the things I was TOO busy as a single mother of three active boys to do. Thank you for your knowledge and encouragement! Much love from north central Ontario, Canada!

One of our favorite meals is rice, diced tomatoes with an egg on top! I know it doesn’t sound good but honestly the mixture of these flavors are out of this world! I like my egg with the yellow runny. Put that egg on top of my rice and tomatoes and yum yum!! I just layer it. Rice on the bottom of my bowl, then spoon tomatoes on top of the rice and the egg goes on top. Try it one nigh when it’s cool and you don’t want to spend a lot of time in the kitchen. 👍

Try cooking your tomatoes in a flat wide saute pan, then drop the eggs into the simmering tomatoes uncovered 2 minutes, then cover and let them poach directly in the tomatoes. I love cooking it this way with olive oil, a little sliced onion in there. I usually eat with a rustic bread, but I'm def gonna try it over rice now.

If you have one of those big turkey fryers you know for deep frying turkey's. fill it with water and blanch all the tomatoes at once.

I am new subcriber today. When l was younger l did my tomatoes like you, except l put onions and green peppers in mine, l did pints. I loved them. But at almost 77 this month l don't think l will do them again in this life time. But l really enjoyed watching you. It brought back many memories. Thank you!

What I really love about you is, you teach and work at the same time. So many others make their videos too long because they talk while doing nothing. I worked in food service for many years and I would always remind folks if they couldn't be productive and talk at the same time, they needed to stop talking. Blessings. Great video !! I've been canning tomatoes for many years. I like your set up . I don't know how you keep so clean .... my clothes get so wet ! Love your salsa recipes.... I'm going to try it this year .

Put a dish towel around the 9th jar in the center to keep it from moving and breaking against the other jars during processing.

I started growing San Marzano tomatoes in my garden just for sauce and salsa. Great tomatoe variety for canning.
