Thank you Mike and Lacy and kids. I am not a farmer or homesteader, just a backyard fruit and vegetable gardener. I didn't know anything about dispatching or processing ducks (or chickens). I always believed it must be a very disturbing event. It doesn't have to be. You all do things in a way I wish all meat animals could be processed. I have been educated. Makes me even more glad I buy all my meats from local, small farms. Love your channel!

A lot of good info Mike, I too love raising ducks. Our Khaki Campbell ducklings were the first animals on our farm. It’s been over a year now and I built them a custom ultimate duck house to live in. I’m hoping to have a pond for them too in the near future. Your place is awesome. They can get a bit messy but so do all livestock in some way. Duck wrangling is always fun eh, us trying to outsmart the duck and grab em. Awesome duckie video bud, Chad.

I'm raising some Khaki Campbell ducks. You do have a variety of ducks Mike. I have always enjoyed hearing your ducks on your videos. You do a great job with them and you have that great pond. That snapping turtle was sure a surprise. The kids are getting so big now. Thanks for posting this on Abundance Plus with the more in depth butchering process Mike. Always great to see your videos. I had family visit for two weeks straight so I'm just now catching up. Lacie using the wax on the ducks was very interesting. I'd never seen that before.

We live in mn and are new to ducks (muscoveys ). My husband is a pastor and some one was like hey pastor how about raising duck you have a swamp. Our first animal on the homestead and ever processed were ducks. Wow, 3 years ago. Your video sharing the tip to put a piece of fencing over the water container was super helpful, as was the processing video with Polyface Farm. Favorite Recipe Duck Confit I use legs and thighs, cover each piece with a generous amount of sea salt and fresh black pepper, place in a container and add some thyme and bay leaf. Refrigerate for 24 hours. After 24 hrs. rinse, cover with duck fat ( render fat from skin in a slow cooker, works great) Bake in a 325 degree oven for 2 hours. Meat will fall off bone tender and yummy. Shred. Makes wonderful duck taco's. I save the fat to reuse, let it cool in frig. then separate any meat juice from fat then freeze the fat. Thanks, Mike!

@Tarri, I know it's been a year since you commented, but the joy of YT is being able to see old comments! Do you cover the legs and thighs when it's baking in the oven? We just started raising muscovy this year and have two drakes to butcher which will be our very first taste of duck. I don't wanna mess it up. LOL! Our mentor who we got the ducks from also makes duck tacos, so I'm excited to try this!

@@lmullens75, Duck is still our favorite, was pride of place on the Christmas table. To make Duck Confit, lightly salt the duck and put it in a container layered with fresh peppercorn and some bay leaves set in the refrigerator for 24 hours. Then rinse pat dry layer in a baking dish and cover with duck fat bake at 320 degrees for 1.5 - 2 hrs. I do cover while baking. When you process the ducks remove the skin from the backbone and extra bits, rendering the fat from the skin in a crock pot on low. You can keep duck fat in the refrigerator and reuse it. The other great thing is making stock from the bones. Enjoy.

Hey Mike a little piece of advice take it or leave it that's your choice okay. Watching Justin Rhodes he has showed that anytime you introduce one flock to another you do it at night when it's time for them to roost. That way everybody's tired and they settle down and then come morning it's like they've always been there.

We decided to add one duck to our chicken butchering this time around to see how it was. Quite a bit different than chickens.....needless to say, we only ended up doing the one. It may have seemed a bit more work because we processed it last after 60 chickens. We will surely be thankful for that meal though!! 🙏 Now to learn how to cook it.

I am starting on raising chickens I was able to raise my layers and am trying to learn how to transition them to layer feed. I also raised some to sell and sold the ones the skunk didn't kill. I will try ducks after I am good at chickens. Any advice on how to switch the feed?

How long does it take per bird? I found the wax way more laborious vs. doing a second scald/pluck cycle with a quick once over by hand.

I've tried both, and I personally have found that a second scalding, followed by a second waxing, to be my ideal method. Water at 145 degrees. Gets them really clean, really easily.

The first batch we ever did we butchered at 49 days and they plucked and waxed much easier. This last batch we did were more like 14 weeks old and found that they took longer to pluck and wax. I didn't time us doing it so I don't know how long per bird. The second batch I bought paraffin wax and mixed it in with the duck wax that we didn't used the first time, I don't know if that had anything to do with them being harder to clean. I think it took three adults 4 hours to process 18 ducks.

Hey Mike. I'm sure you already know this but wouldn't it be easier it get one of those big fish nets and catching your birds? Just wondering. I saw it on Gold Shaw Farms videos.

It isn't bad catching them like we did. Once you get them close to the fence it becomes a large net.

@@MikeTheFitFarmer I've used the fishing net on smaller birds that were really hard to catch. I think the larger birds might hurt themselves trying to get out of the fishing net too violently. With quick little birds it's the way to go!

Where did you get your wax from? Also, we purchased the Cajun Rocket 120 qt for the turkeys we just processed. We are having a hard time keeping the temp where it needs to be. How do you manage your temps? Are you constantly regulating the gas flow?

We end up turning off the gas once it gets where we want it. I think Mike had to turn it back on once or twice during the processing but it is so much better than using our old pot that took forever to get to the right temp. I wonder if your temp changes so fast because you were butchering such big birds?

@@MikeTheFitFarmer Yea that is one plus about the cajun rocket it does heat up fast and takes a while to cool down. When it was time to do the shrink wrap I had a meat temp that alert when it goes low at a certain temp and too hot at a certain temp to help gauge it better. Where did you get the wax from?

I prefer the ducks because to me they are more peaceful and they sound like they are laughing. My chickens are mean little raptors. I have my ducks and chickens together but I’m going to have to separate them. My ducks are bigger and peaceful. The little chickens are mean little buggers.
