I only used this method with squash/ pumpkin soup, but I think I am going to try the celeriac one. BTW the colour of the cabbage soup is interesting Speaking of soups, I am going to make mulligatawny sometimes next week, it's not roasted and needs a bit more effort, but it will be just as thick as these.

@EarthyGoodnessKitchen It's originally from India, but it is supposed to be popular in Britain, too, I am told. It exists as a vegan version with vegetables and also with chicken. It's lentils, vegetables, coconut milk and spices.

Thanks for these! I once made a roasted red pepper soup using this technique. Very yummy. Any substitution suggestions for the chestnuts? They are hard to come by where I live.
