Look into template blocks in notion I think that’ll help. Also for your main dashboard or any sections you have a lot of content the new table of contents feature is a godsend.

I feel like I don’t have a problem with being consistent as much as I have a hard time getting the content! I still work full time so it can be a struggle having time to get quality content sometimes, so I just do what I can for now and upload every other week. Oh my god, this is why I will never become a good you tuber because I don't want to have any schedules or plans. This is where I go wrong. I understand what you are saying but I still don't want to have a rigid time table for my hobby.
