It's a brand new knife, cant be that much to sharpen surely? I would have thought a bit of work on a polish steel would be enough. I've recently bought a few Victory knives, a 10" bullnose steak knife, a 8" breaking knife, and a 6" boning knife. Gonna be cracking them out soon. I heard good things about them, mainly their reputation at keeping a good edge for a decent amount of time, whether that is true or not only time will tell. Thank you.

What grit is your stone? How do you know when the knife is sharp ?

Honestly don't know what grit it is haha and I just keep going until if feels right

Great skills in floor work iam also a slaughterman but on a line system which can be mentally challenging 300 cattle a day yeh living the dream ..Uhh yeh I basically sharpen the same way ..HAPPY DAYS HERE IN THE UK

@lindsayhomekillservices yeh dude ive been doing this for 40 years now an you wouldn't believe the changes in this industry especially in the UK hygiene an safety regulations are certainly O T T.And the amount of old boys gone but not replaced are worried times . Anyway that's anough of babbling stay safe an do one thing for me buddy wear a slash glove saves yuh fingers an no sick days ...Stay safe👍

Never worn a glove in my life haha never been able to can't stand them but I've also got the scars to show 🤣🤣🤣

I use a blue knife proof glove covered by a blue latex glove on both hands . I use both hands on the chain skinning deer .

Thanks for sharing! Is your stone the silicone carbide Norton or the Aluminium oxide? ie, the $60 stone or the $20 one?

Do you use this thinner curved knife to bleed the ox and this thicker curved one to remove the hide? Is it these two that you use the most or is it three?

I don't really use a certain knife for a certain job just depends on how the knives going 99% of the time I'll use 1 knife for the whole day doing everything
