I've been following both Andersen & Maillard and Laura on social media for a while now, and seeing her as head of pastry in one of the most renowned bakeries in Europe (if not in the world) really makes me wonder and acknowledge the huge passion and the hard work she puts into this art. It is really inspiring and it would be really fascinating and motivating to learn and work there. Thank you ♥

Lovely! This is going to be quite nerdy but if you don't mind a production suggestion: 1: Make sure all voice recording made on location is in mono. Lauras voice recording is a bit out of phase. 2: High pass all voice at about 150-175hz. Your male voice is quite bass heavy, which might be because you record your voice too close to the mic. High passing solves that and make the voice clearer and more pleasing.

Best in EU ? I tried bakeries pretty much all over Europe in the fanciest of places. Austria and France had the best pastries, breads and things as such. They mastered the art of pastry and confections the way Italians made with pizza and pasta.

High end bakeries like A&M may be thriving in Copenhagen but nationwide common bakeries are losing out big time to bake-off bread sold cheaper in supermarkets. When I was a boy any self-respecting village would have a bakery, but not anymore.

We’ve had the same problem in our city in Italy. All the good spots are concentrated into just a few areas, and it’s hard to find valuable offerings in neighborhoods outside the trendy ones :(

I’m a dane too, living in Copenhagen. I personally love the trend of bakeries pushing the boundaries and using higher quality products and techniques. It puts Copenhagen on the map and when tourist, or we locals, leave the city the standards of a good bakery will be at a completely new level. So I guess it’s how you look at it.

In my opinion the bakery scene in CPH is actually not super good... It is always just boring pastries and nice cinneman buns. There are no exciting cakes. In the video its also basically just three different kinds of croissants and a simple "stir cake" (or as you would say in german: Rührkuchen; you just put all ingredients into a bowl, stir it, put it in the oven and voila the stir cake) Nice video though
