Last time I was in New Orleans I went to Loretta's and had her incredible pralines. I talked with her and she is wonderful. Her pralines are as sweet as she is!

I really enjoyed your presentation. Thank you for giving me some inspiration to make these as best I can this Christmas season. I grew up in Louisiana where pecans are abundant. I used to "pick for halves", as a 10 year old child, meaning the farmer let me have one half of whatever I raked up and he got the other half. Then I used a red wagon to bring them home. (about 1 mile walk). When I moved to Beaumont, Texas, pecans feel all over the city from great, old trees, along the sidewalks and they were available to whoever might want them, being public property. I remember sitting outside on the porch steps after a rainy day and breathing in the musky smell of green hulls when they first fell from the trees. All that to say, I have a place in my heart for pecans. lol. Anyway, I love pralines and yet I haven't made them in years, as now I am an old lady and live alone. This year my son will be here at Christmas, and they will be part of the festivities. Thanks again for your presentation and also sharing your joy and pride in your work. Can you share how many parts sugar to milk to butter? I’m also surprised so many candy makers swear by a thermometer but I believe Loretta after 5 generations, she knows! I’m sure there’s a recipe written for the family only. Would love to make these and can’t afford to experiment.

I visited New Orleans a week ago for Mardi gras and was luck enough to rent at a guest house on the same block as miss Loretta's corner store! Sadly, she has passed away and her family now operates the store, but I was spoiled to experience my first praline EVER from this very kitchen. It was one of the most amazing treats I've ever had! So much so, when I got home I placed an order for the sampler pack, but the shoestring are my favorite!! And what a blessing to walk into her store and be surrounded by scripture and feel the love she built all around. 10 out of 10!

Thanks for the inspiration regarding the equipment Ms. Loretta. Yep, everyone back home makes them. I've been in the Dallas/Fort Worth, TX area for the past 11 years, and nobody makes pecan candy like me out here. So, this year I've kicked it up a notch. My goal is to get on Ms. Loretta's level to do mass production.

Girl I live in North Dallas and I hope I run into you with a box full of Pralines one day. Lol It's one of my favorite NOLA treats. I would certainly buy a few from you. Every now and then I go to the Daiquiri Shoppe in Carrollton (Dallas suburb) and purchase a few. But good luck to you with your goal to get on Loretta's level, if you haven't already. There was a time when Loretta wasn't on Loretta's level, and with hard work she got there and so can you. 😊🤞🏾

Charlinia77 In Louisiana they are called praw-leens (pralines) but some locals in New Orleans say "plah-reens" (plarines), like a slang. Some people in Louisiana also call them pecan candy, pecan in southern Louisiana is pronounced (puh-cawn). Pralines came to Louisiana from Europe. The French settlers of New Orleans brought a French recipe for French pralines and substituted Louisiana pecans for the usual almonds and used cream instead of water. So today's pralines in Louisiana are Louisiana adapted confections of French heritage.
