They're using thickeners(or "bulking agents" in the trade), starch and xantham gum, to make "light" mayonnaise. Or solidified sour water with paprika colouring. Oh! You can also markup the price because it's a "diet product". Win-win situation, if you ask me. Spend less, earn more.

Mayo is the easiest condiment to make, all you need is a beater or food procesor. The ketchup has to be coocked and has a LOT of ingredients. And the mustard, which is the hardest, has to be left to ferment. And if you ever want to make some salt, all you have to do is to take a bucket of sea water and leave it under the sun to evaporate :) .

Take 4 eggyolks, a teaspoon of mustard, the juice of one lemon, some salt, pepper and beat vigourously till it starts getting lighter in colour. Add olive oil in little drips while continuing the beating, takes less than 5 minutes and you end up with a really lovely mayo. I do it once a week because I'm gluten intolerant

The Vinegar and Salt are both preservatives and the eggs themselves are pasteurised. Also don't forget the entire process is cooled and sanitary. It won't go bad till it heats up and is opened which doesn't happen really since mayonnaise is kept in the fridge after you buy it.

Its called a beard guard, its necessary for certain food producing companies for production workers who have beards.. But by regulations or normally , production workers should not be allowed to have facial hair for hygiene and sanitation purposes. But then again, each company has its own food regulations and laws.
