I watched the Korean one and this Japanese after that, a big different quality of processing. I don't know how is the taste of both because i haven't try it yet, but Japanese jobs is much more carefully and quality. Well done, hope the taste is good too. Thanks for the videos.

Minha irmã me enviou um vídeo. Nele uma pessoa colocava amêndoas no caqui seco. Vi que era caqui por causa que alguém escreveu nos comentários. Procurei e encontrei algumas pessoas fazendo esse processo em casa. Ao abrir esse vídeo o que me chamou a atenção, além do processo mostrado,foi a música. Na igreja que frequento , Congregação Cristã no Brasil, tem essa melodia nos cânticos. ( Hino 305- CCB) 🎶Oh! Que Fundamento em Jesus Cristo temos, É Ele a esperança do eterno porvir; 🎶 Belíssimo trabalho . Bençãos Deus 🙏🏻My sister sent me a video. In it, a person placed almonds in dried persimmons. I saw it was dried persimmon because someone wrote in the comments. I looked and found some people doing this process at home. When opening this video, what caught my attention, besides the process shown, was the music. In the church I attend, Christian Congregation in Brazil, there is this melody in the songs. Dried persimmon fruit turns brown. How can dried persimmons stay orange without turning brown? Additionally, dried persimmons often exhibit a white crystallized sugar accumulation on their surface (appearing as if molded), but in this case, there is no such sugar buildup. How is this possible?

Thank you, does it matter if you use the astringent or non astringent persimmons? When is the best 'ripeness' stage?

Hi @jjdeadhead. Hoshigaki is only made with astringent persimmons, as the drying process concentrates the sugar in the flesh, and astringent persimmons contain more sugar than non-astringent persimmons.
