@@otkanimation5453 look closley between the freezer cut, he puting shwarma on big plate it look like christmas tree fat on bottom thinner on top its raw it dont have shape, after freezer cut, frozen kebab from factory appeard, its already frozen, the plate is much smaller, the form of kebab changed becouse original shwarma is made this way thin on bottom fat on top, and its round on top thats why in my country we call factory made kebab balls "BALL OF POWER", and again he putting already frozen shwarma after cut to frezze it in the freezer!

i worked at shawerma place in egypt and they used to put a large layer of fat just on the tip top of the skewer so that the ends of this fat melts on the chicken as it's cooking

A shawarma costs minimum $10 with standard price being around $13-$18 per piece here so buying 140 pieces is already $1820-$2520. I am envious that you can eat out for that cheap. Just as a sidenote just the price of 30kgs of raw chicken here is about $450 so not even counting all the other ingredients and the time spent to prep and cook the shawarma it costs more than just buying the completed shawarma there. lmao

Warming up the pita bread will make it a lot more flexible. What you have looks really fresh, probably cooked the same day and not necessarily dependant on this technique, but most people won't have access to such fresh pita bread, depending on their geolocation, but just warming the bread in a pan or folding toaster for 10-20 seconds it will change the bread's flexibility a whole lot.

Goodman, cabbage rubbing is something that the modern restaurants forgot about and it makes the salad SO MUCH JUICIER, plus the salt gets distributed so much better (and next time try adding a little apple transparent vinegar to it, you'll have a pleasant surprise).

Correct me if I’m wrong, but wouldn’t alot of those juices in the pan under the meat be raw from when the heat started to thaw out as it was being cooked? Doesn’t seem very sanitary to cut the meat and let it fall straight into the juice

Right, when cutting fresh herbs, something I learned from my parents is that you chop some of the bunch, then just put the rest of the bunch on top of the chopped herbs and continue chopping, and just repeat the process. By the time you reach the hard stack that you want to throw away, most of those herbs have been chopped several times and you don't need to chop them in a pile. There's a secondary advantage to this technique, uniformity makes our brain happy for some reason. It's the case with AI produced musing and human produced music too. That uniformity where some of the herb will be chopped 6 times, some 5, some 4, 3, 2 and last only ones (the last chop round, do it a bit thinner or at least the same, too big is too big), creates this randomness that makes our brain say "that looks pleasant"

The price difference is actually neglijable because you didn't count the cost of labour + ingredient supply and delivery + gas/electricity for cooking + studio lighting, heating/chilling, rent, etc + probably you didn't count the cost of tin foil, spices, etc + the delivery of the final product. I didn't include the maintenance cost of all the tools, including the empty freezer. I am not writing this to take away anything from your wonderful effort to feed someone else, especially someone in need, but the total cost of your shawarma is at least as high as the cost of the ordered shawarma. The difference is that, I am pretty sure your shawarma tastes better because it looks like you used high quality ingredients and your tools are incredibly clean and good, which most takeaway shawarma places lack so they can keep the cost down to make any profit whatsoever. If you managed to read all my messages, I appreciate you but even if you didn't, I appreciate very much the kind gesture to feed someone else, especially since it is someone in need. Kudos to you, you are a competent chef and potentially a kind soul

In Kerala as per mathematics Your shawarma costs around 150 ₹( if you serve luxurious) And 140 x 150 = 21000 ₹ Here chicken costs 130 ₹ per kg Then 30 x 130 = 3900 ₹ Plus veggies and mayo costs around 2000 ₹ - 2500 ₹ adding up fuel cost and other miscellaneous expenditure you get a production cost of 3900 ₹ + 2000 ₹ + 1500 ₹ ( miscellaneous) = 7400 ₹ total . The profit can be assumulated some where between 12000 ₹ - 13000 ₹ per 140 shawarma.

Here is another tip, instead of adding the sauce at the end, try glazing the pita bread with the sauce before you add ingredients to it. It will disperse the sauce a lot better and you have have an extra saucy shawarma without the sauce dripping to the bottom.

For fries, you can use an air fryer. The taste is comparable, the lack of fat is noticeable but the calory count and health impact is huge.

Food safety has left the building You should really be keeping the food warm or chilled throughout the process, or get more hands to help so it’s not sitting out for hours. It’s one thing if you’re making it for yourself, but you really gotta be careful if you’re serving it to others. Especially to children. I commend the effort and the generosity, but running the risk of getting others sick due to the lack of food safety is not worth it. Remember: Cold foods should remain at or below 40° F & hot foods should remain at or above 135° F. Anything else in between is considered the Food Temperature Danger Zone. All foods should not be left out for longer than 2-4 hours, unless you’re holding the food at the appropriate temperatures.

I've never worked in a fast food place, I've always been an IT engineer but I am a pretty good home chef so what I am about to tell you doesn't come from lack of education: I think you added too much chicken breast, OR you should have marinated the breast in baking soda, then add some corn starch before the normal marinade you used. Also, just slicing the breast in half is not enough, at least run each breast through with a small knife several times to create small holes for the marinade to have an easier time to penetrate those tight muscle strings. All this extra fuss will increase the softness and juiciness of the chicken breast + it will cook a lot more apetising. This info is not only applicable to this case alone, it's something that I've learn to do over thousands of cooking sessions and I don't always have the best meat, or can use fatty meat.
