Our boy dog Buster who is a Jack Russel just Loves Holly. He watches your video with me and when he sees Holly he gets so excited. He jumps up and dances around barking. It is so darn cute. Some times I hold the video so he can see her longer. It is so amazing that he knows the music at the intro of your video and comes to watch. Dogs are so darn smart. Same (Gulf side). When I have money for food, I go through olive oil pretty fast. I just bought a 25.4 oz bottle last month and it's already half gone. SMH. Being able to have your own source of olive oil must be fantastic!

Hi Nicki! We do the green olives same way in Turkey, the only difference is we just slightly crack the olives and keep the seeds inside. They say, that way the cured olives can stay firm up to 2 years in salt water without getting mushy.

I love that "spremitura a freddo" (which, for non-Italians, translates to "cold pressing" of the new olive oil.) Every time I'm in Italy and have a car I load it up with this olive oil, cheeses, Italian tomoato sauce, and the traditional bronze-die cut pastas...SO delicious! Great video Nicki and Carlo!!

Hello, Nicki & Carlo!! This episode was so interesting!! Thank you for bringing us along!! I already knew olives from the tree were not pleasant to eat. Years ago, I had a native Italian friend who knew someone that would sell him some raw olives. He would cure them, a lengthy process, and produce the best tasting olives I ever had the pleasure to eat. I grew up with olive oil being used as a condiment. Still love EVOO to this day!!

I guess that counts me out on helping next year or getting a small container of your olive oil. Also, I guess after your first press it's called cold press or extra virgin olive oil. Oooooh! This week’s video is AWESOME! I never imagined the process like this. Absolutely fascinating! I made olives from a tree we had some years ago, but it was a very fussy process, involving slitting the olives, soaking in water with ashes for some days, then rinsing and soaking in brine after that. After that one experience I decided it was easier to just buy olives in the future! All the best for the coming week. 🇨🇱🇨🇱🇨🇱❤️❤️❤️

I managed our olive grove for 10 years in California. I loved seeing your whole harvesting process from tree to cup, same as ours! Watching the Pieralisi machines work their magic brought back wonderful memories. Taking the first sip was always anticipated - would it be a 1, 2 or 3 cough year? Pouring the new oil over ice cream is the best - a “cold fire in mouth” experience!
