I really should've explained what a dosa is. A dosa is a thin, crispy, savoury South Indian pancake made from a fermented batter of rice and lentils. It's very light and not sweet. The 2 in the video are filled with lightly spiced potatoes and onion. The darker one has a generous amount of chutney powder or "gunpowder" sprinkled on it. You then enjoy them with thick and fresh coconut chutney and a vegetable stew called sambar. This one costs $1.30 or ₹110 and it'll fill you. To call podi a spice mix or masala would be inaccurate. It is actually roasted lentils coarsely powdered with spices and sesame seeds so it is not pure spice but a little bit of protein.

Hey Karl (or anyone that knows), in the Indian restaurants near me, I notice a variation in the texture of the naan. Some are doughy and chewy while others are predominantly thin and a little crispy. I prefer the latter myself, but I'm not sure if this is just variations between restaurants or if it's some kind of regional recipe that I should keep in mind?

There are a variety of breads - right from the home made rotis (just like totillas, thin and soft), to rotis to different kinds of naans and kulchas. Some are pure wheat based, and some like kulcha have a little bit of white fluor mixed in them. There are also the fried versions which is the Bhatura and Puri ( they puff up when fried). So, not sure which one you ate. Also, depends on how they make it.

@@fleur257 It's certainly not fried for sure. It's a bread that is put into the (often stone) oven briefly before giving it a quick brush with butter to finish it off. In the West, we just call these "naan bread" (not helpful, I know) and I know it's not a roti.

@@AnakinSkyobiliviator That's Naan for sure. I guess the softness or crispiness depends on who is making it. But, a similar version of the Naan (and looks like Naan) is the kulcha. It is slightly more thinner (and could be crispier). I suppose that is what you are were served. I think the difference between the two, as I previously mentioned, is the white flour mix in one of these.

While I am perfectly OK with potatoes in dosa, the traditional dosa is totally plain without any filling. Back in 1976 the vegetarian mess at IISc Bangalore served hundreds of plain dosas every day at breakfast, piping hot, delicious and perfectly made. They did not spoil the dosas even once during my month long visit. I hope the same excellence continues today.

Nah, its actually rice flour and sugar that gives the crunchy browish texture. Also its pretty common WORLDWIDE to use hands to cook and high temperatures kill everything. Go to your local restaurant and ask around, you'll be pleasantly surprised. Also why are you getting disgusted, no body is asking YOU to eat 😂😂

Magic, the podi disappears on his fingers and its miraculously wet! Surprising right? Now let me tell you the secret, its called washing between the cuts/editing. I hope a KZbinr hails soon who can feed your hygiene needs on a KZbin video where he shoes the cook washing his hands for 30 seconds with soap and water so that you sitting at home can find some other flaw in the video.

Dosas are supposed to be light and healthy but this guy is spraying ghee like it's the end of the world. The result is a super greasy dosa. Also, he can use a simple powder shaker to put on the masala rather than just his bare hands, which I highly doubt is always washed.

To everyone bothered by the cook using his bare hands. 1. This is how Indian food has been made since millennia. 2. It's said that the touch indeed gives the food it's "taste". 3. Cooks wash their hands before settling in their "zone". You (western audience) don't know how much people care about 'jutha haath' and 'pavitra bhojan'. So washing their hands before starting is mandatory. Lastly, I don't know how wearing a glove can help with hygiene. Right now it's his hand touching things around him and then it will be the glove touching things. I don't believe they change gloves for every new ingredient they touch or they change glove when they touch the counter or money, or utensils. And, the very last thing, strengthen your digestive systems. 😅

So either there’s trust or there isn’t. I‘m not saying gloves are useless, but if the establishment and it’s people are dirty, then the dirt will be everywhere. Apart from that, imagine cooking, sprinkling the spices and handling the food with gloves on. It takes away a lot of important aspects like dexterity, the feeling and the connection.
