I figured out the difference. There's an even bigger skip by the anime waifu. You take that first bed and There's a hidden bed next to anime waifu that you land on from the first bed and that takes you straight to the ship.

My jaw dropped at how beautiful the graphics are compared to my pc. I had to turn all my settings to low and half my resolution just to run at like 20 frames so to see it in its full glory again after a while of playing it myself....its just nice.

There are people in the speed running community whose goals are finding glitches and skips. These people know how to break a game and bend it to their will. So for the dragon skip they probably started by noticing that the dragon wing tips has a lot of momentum. They just need to find the right time where they can use that momentum to boost the player up.
