Reminds me of a cake recipe I improvised for my birthday, this year -- with ground up gingersnap crumbs for the "flour," a couple of tablespoons of natural style almond butter, thinned with a little fruit juice that doubled as my milk substitute and acid source, (I used tart cherry juice), a couple of tablespoons pasteurized egg white (the kind you pour from a carton), and plain baking soda. I made just enough for two servings, and it took three minutes to cook until firm in my 700 Watt microwave

Thank you for educating us! I even learned more about cream of tartar, which I just learned is a byproduct of making wine. Wine is also a way to add acid to recipes; vinegar, cream of tartar tar, lemon juice are all acids that are interchangeable in very small amounts ( like a few drops) for recipes like icing. Watered & vinegar can replace wine in pan cooking because of the acidity but wine also ads sweetness.
