I know!! Look like it was baked specifically for this video. I mean, oven has grids where you slide in the racks and trays - I don't know. I came here cuz my cakes dome a bit much - not great for layering cuz then i have to slice off quite a bit.

This video is great (short, clear & makes a LOT of sense) and it was very easy to understand. I also loved your advice on how to get muffins to inflate really well (i.e. by simply adjusting the temperature). I'm one of those people who can't keep their hands off the door to check due to impatience and excitement, hahaha :). My mother used to tell me never to open the oven door when baking, yet I'd never really take it seriously. The way you explained why made total sense though. So next time I'm baking something, I'll be sure not to touch, unless absolutely necessary (near the end). I also appreciate how you give an approximate baking time (I've always wondered about this), and once again - made total sense to me, as I've noticed the end result depends on a lot of factors (oven temperature, room temperature, heat setting, type of batter, etc., ... ). Thank you, I love your energy! :).

Hi Amali, yeah that happens to me a lot too. so what i do is i start cutting from one end and not go all the way to the other end. instead, just keep cutting starting from the edges until you finish off in the center of the cake (not on the other edge). and the reason why this happens is probably your cake is too moist and crumbly, which is great because your cake probably tastes amazing, but it makes it difficult to cut. and make sure that it is completely cool. another really nice trick, if you have some time, is to freeze your cake and cut it while it is frozen the next day. this way the chances of it breaking are much smaller. also using the cake leveler is actually not the best idea, because it's not easy to control. instead, place some tooth pick all around the cake (about 7 or 8) at the desired height. then take a long serrated knife and and use the tooth pick as indicators. trust me, it's much much better than using a leveler. and if you do this with a frozen cake, then for sure it won't break. good luck

Hi Amira, the oven that I have is only up to 250F, does it mean i cannot bake cake (chiffon) cake cause in the instruction say bake it to 350F? Will it helps if i will use oven thermometer till it reach to 350F temp.thank you & hope to hear from you.

250F is low to bake a cake, your cake will not rise properly. Try preheating your oven for a long time in order for it to become hot. And when u open the oven door, don't keep it open for long for the heat to stay inside the oven

I just baked a chocolate cake which turned out to be dense. No fluff and no puff. Can I pass it off as a dense sponge recipe instead ? Surely someone can appreciate it without suspecting it was baked with too much liquid such as buttercream and sour cream?

do you mean that your oven has heating elements on top and bottom? oh that's too bad, it's better if it's only down. you cannot control it to have it only down? if not, try this: place your rack closer to the bottom. heat your oven very well before putting your cake. make sure it's very hot. then, before your put your cake, lower the heat. that way, your cake will not burn from being too close to the heating element, but your oven will be hot enough to make the cake rise. and remember, do not open your oven door

1. If you are using convection oven either turn on the bottom or top heat setting only, if you turn both heat areas on, it will bake the cake faster however it will mess up with your timing and you have cant leave out your baking to do other things. 2. trial and error; if your recipe tells for 150C reduce it by 130C, same time. 3. pre prep details, always sift your dry ingredients, after that mix it very well using whisk before you incorporate you wet ingredients. Dont over mix

Hi Amira,so I want to ask that I made cake it was ok in mix but after putting the cake in the oven and after it's baked then after sometime i try to take cake out of the pan and I see some down layer was broken like some parts in down layer was stick in the pan and the cake was very very soft and could not put the frosting I do know why can u pls tell me why ??

MAKE it you didn't let it cool long enough or you didn't dust your pan adequately. you can also use parchment paper instead of dusting it.

usually the cake cracks if it rises too much because the oven is too. to prevent the cake from rising too high, try lowering the oven tempreature to 325F instead of 350F (that's 165 degrees C instead of 180)... and make sure your oven is well heated at that temperature, avoid putting the cake in the oven if the oven is not preheated properly, otherwise the cake will rise too fast as the temperature is increasing

Hi Amira....am facing the issue which you explained in your tip number three.....my cake sunk from middle. I tried to increase my baking time by another 10 min so that I allow the cake to bake completely......but I found vapours over the oven glass....what could be the reason for this? Even after baking it for another 10 to 12 min my cake is still not evenly cooked. Its sunk from middle

K PK hello. I’m not really sure but it seems to me that your oven might not have been hot enough when you put the cake in it. It needs to be pre-heated well before u put it in the oven and close the door immediately. Then let it bake and it should be fine. i usually find vapor in the oven when i first turn it on, as it’s heating, the vapor forms when u heat a cold place, and vapor forms against the glass, just like in the car. But it disappears and dries off so once the oven is hot. I hope this helps 🙂

@@CookingWithAmira thank you for this tip...my cake actually rises evenly inside the oven in just 30 mins with temp of 180° and it looks all Ok, but after 30 mins vapours starts building over the glass. And it tends to get more after 30 minutes....I tried to increase the temperarure as well but there is no much noticable improvement..... It just sink soon less than 5 min when I take it out.

I'm sorry to hear that namjoon :( i can think of two reasons why this happened, 1) Your oven is probably too hot, hotter than 350F (or 180 C), which causes the cake to rise very quickly. 2) could it be that you added too much baking powder? the general rule is 1 teaspoon of baking powder for every 1 cup of flour

Hi Leslie, usually this probably means that your oven is too hot, or it is placed in the bottom rack. try placing it in the middle rack, and baking it at 350 F. i hope this helps
