Good question! The cake is completely egg-less, but the cookies with egg are optional :) There's a ton of eggless cookie recipe online that would be great substitutes.

Ener-G Egg Replacer works well as a substitute in royal icing recipes. Meringue powder is actually made with dried pasteurized egg whites. It's great for making raw egg recipes safer to eat, but for those of us with egg allergies it doesn't work as a safe alternative.
