These are so cute! You made it look deceptively easy ;) I would say from experience, though, that you can fold the batter just a bit more to prevent peaks from forming when you pipe, however this would also meant that you have to give a bit more room between each cookie for the batter to spread a little bit. Better to underfold than overfold though.... And! These taste way better the next day, after the cookies have absorbed their filling :9 It's kind of painful to wait overnight to eat them but they are WORTH IT the next day.
