I just wanted to mention that this kind of persimmon has been in the Middle East for ever. The other kind that you eat it like apple I was introduced to it in 1980 in Los Angeles. I like your recipes. I have tried a few of them. Thank you for being there to teach us.

We used to make this with American persimmons (Diospyros virginiana). We'd gather them when they were ripe, and put them through a food mill to separate the pulp from the skin and seeds. American persimmons are full of seeds, but the pulp is sweet and makes a delicious bread.

I love persimmons. You're right they need to be eaten really really ripe. Otherwise they are really flowery and leave a wear texture in your mouth. Great bread but I would make one higher loaf rather than 2 smaller ones, or muffins. Cream cheese sounds delicious on top.

Thank you for this recipe! I especially appreciate you giving measurements in metric, also. Persimmons are in season and I’m trying to use a bunch of them, given to me by a neighbor. I reduced the oil to 1/2 cup, and the sugar to 100g; the bread was sweet enough for me. It wasn’t very moist, but tasted good: After all, it is bread not cake! Just trying to eat on the healthy side. 🙏

I think the volume of batter in this recipe requires the use of just one 8 x 4 or 9 x 5 loaf pan. The finished product will be less flat and more a standard quick bread height.

Should you make this bread again, a spoon will scoop out the persimmon pulp just fine, and I have always seen the pulp sieved or milled to get it smooth.
