• 4 ounces unsalted butter
• 5 ¼ ounces granulated sugar
• 1 ¾ ounces brown sugar
• 1 large egg
• 8 ounces persimmon pulp
• 10 ounces all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon kosher salt
• ½ teaspoon cinnamon
• ¼ teaspoon nutmeg
• ¼ teaspoon ginger
• 1 ounce old fashioned oats
• ⅛ teaspoon allspice
• 3 ounces dried cranberries
• 2 ounces white chocolate chips
• 2 ounces pecans, roughly chopped

Mom made these all the time when I was growing up. Persimmon trees are planted all over the Sacramento and San Joaquin Valleys of California where we lived. She made hers with no oatmeal and added only chopped walnuts (besides the spice blend of course). If people are unfamiliar with persimmons you have to wait until they are very soft ripe or they're very bitter.

I'm in Sacto for nearly 50 years. I made persimmon cookies for the first time this year. I had no idea what to to with these fruits, which are everywhere. Now I know. Best cookies, ever.

Ive been making the cookies using your recipe thank you theyre very good and recipe is very easy . Only thing is I spray my ice scooper with pan spray and it makes it a lot easier to scoop out just thought Id throw that your way since you were so nice to share your recipe again thanks

Recipe makes good cookies. I use the 'wild' persimmons that I gather in the fall here in Ky. Pulp out the 'simmons thru a colander and freeze the pulp for later use. May I suggest when adding ingredients to your mixing bowl be sure and turn off the mixer, add your ingredients, turn the mixer back on.

Hi Anel! The 50 minutes of cooking just factored in 3 trays of cookies if you were to bake them one at a time. It should be about 14-16 minutes per tray. Thanks for the question!

I just finished doing your recipe but I find that by adding oats it tastes more like oats and not like persimmons

I have fuyu persimmons I want to know if I can use those to make persimmon cookies? If so I need to know if I’m supposed to boil them or just let soften?

Were those made with Fuyu Persimmons??? Looks like it by the persimmon you had sitting on the counter.

I believe she used the jelly like pulp of a Hachiya persimmon. We have been dehydrating ours for the last week. Fuyu’s are called apple persimmons because they are picked and eaten while firm. A boxful lasts as long as apples whereas the hachiyas can NOT be eaten until they are jelly like inside.

artARi808 thank you! I would try making a flax "egg". Combine 1 tablespoon of water and 3 tablespoons water. Stir and allow to sit until thickened, about 10 minutes. This replaces one egg.

I made mine with the triangle shaped Persimmons and look like boobies and no almonds and semi-sweet chocolate instead of white chocolate they're very soft I did 1/2brown 1/2 granulated suger
