Gotten some of my best briskets from Walmart and they are so cheap! Basically cube them and turn them into candied burnt ends anyways! Great job. I go at 198-220 over night. Go by Bark usually. Also use a water pan like yours. Wrap in the morning and run at 250 to 203-207 IT. set in a cooler for 2-3 hours then enjoy!

That rack that you have is awesome. Is there a way to purchase that by itself? I have a top shelf rack for mine, but I like this one much better. I should add: what are the dimensions to this warming rack? I've come across an array on the internet, and just am unsure which is best to fit a brisket.

They used to sell it on their website. But I do not see it in there anymore. You may be able to shoot the an email to see if they still make it.
