As a breakfast cook seeing this at first i wanted to hate so bad. Within 2 minutes my mind was completely changed. Not only are you fast and efficient, im a major stickler for hand washing and glive changes and you all around killed it. Well done sir. Literally within the first minute of the video he cracks a bunch of eggs, mostly with his right hand, then shoves that same hand into the tub of sausages. So now you have sausages contaminated with raw eggs.

both good points, changed gloves quickly but also at 4:13 they grab more sausage and put it on a plate immediately going to the window, potential contamination but the actual risk might be low for other reasons.

i remember when i used to line cook. it was a bigger restaurant so we had a full team especially during rush. and i remember completing dinner and lunch rushes being one of the most satisfying feelings. there is nothing else like it in life. i really look back at it fondly. keep grinding brother great work. all the best to you

I enjoy watching you and learn just why you do different things at times , cooking the meat , spuds , eggs , just so you will have everything ready for a order to be done in good time and all done close together . you are a good cook and how you do your job show's it . i was a cook for 9 years. i also had to do prep and sometimes come out and service customers. it is stressful work. youre always a little sick, a little tired, a little overwhelmed and a little short staffed. Sometimes working weeks without taking a day off because nobody else can cover you. Always overworked and severely underpaid. The people who never done it, dont know. and those who know, know.

Had a couple of things that strict chefs would freak out about. Twirling pans and spatulas will get ya booted in a lot of kitchens. Everybody does it, just don't let the boss man see it. Plates on the flat-top, and plating on a full stack of clean plates are both kind of no-nos but doesn't t look like he has the best plating station. In the state I'm in, you can't have cold tables directly under the window, so most restaurants do plating there. He's great, though. Overall, great hygiene, good efficiency, and the food looks good. Never seen him too stacked with tickets, but I'm sure he could handle more. I'd hire him, but I'd probably move him to dinner and see how he did. The reason for that is his demeanor, he's stays really calm, sometimes that can be the best attribute a cook can have. Seen plenty of very skilled chefs who can't handle the stress.

I feel like what you do is very under appreciated. I can tell you are really skilled at your job. It’s definitely not for everyone (me). I’ve thought about doing recordings at work, I’m a commercial carpenter, but I would probably get laughed off the job site, lol. Anyway, keep it up bro, you do great. Edit: I can also see you put care and attention into the food, making sure it’s made well and correctly with each order while moving quickly. I respect that a lot. Where ever this is, I would absolutely eat here!

I think what you’re doing is great! I grew up without a father figure and my mom was always working international during my grade school times. After that, she never had any advice for anything when it came to life or even bothered teaching me how to cook. These vids help those that are trying figure things out on their own. I don’t think I could ever thank all the POV chefs enough.

As an Asian American who grew up not having much, the appreciation I have for the Latino community is second to none. This reminds me of the days where I didn’t have much, and I was working at the taqueria across the street a couple blocks away from my parent’s house. Little did I know, I would be graced with the warm welcome of latino hospitality. They took care of me man, wholeheartedly. They always made sure I had something to take home after my shifts, knowing somedays I didn’t get to eat at all. And being where I’m at in life today, its definitely an experience that I’m extremely grateful for💯

As a cook myself watching the confidence and skills you demonstrate help me improve on my weaknesses, we usually have 3 cooks per shift but went with just 2 now with actual better flow. I love to cook... and everyone always ask me why I dont go become a cook/chef, and this video is proof why. Theres a difference between a hobby of love and labor of love. I couldnt handle the timers, speed or repetition of everything. It's a whole different game.
