Our family chef was my cousin Dave we called him Bella, I am an only child so he was one of the closest to being a brother.. .he was such a big part of so many memorable events cooking gourmet meals for us.. . sadly we lost him to heart failure a few years back and now I find myself trying to do my best to pick up the mantle and follow in his footsteps.. .I haven't gone to school yet but I am always up for trying new recipes and techniques and my family likes the way I cook so I must be doing something right, obviously I'm not anywhere near the gourmet chef my cousin was but he is my inspiration every time I start to cook.. .I have even started a cast iron collection with several pieces that are family heirlooms being over 100 years old and still use them everyday.. .I have even started a knife collection and would love to add this Japanese Huusk to it.. . little by little I am strengthening the craft that my cousin dedicated his life to and hope that I can be even half as good as he was.

Do you prep your own kitchen? Do you do that the night before or come in several hours early to do it? I cook like this at home. I get everything I need for whatever meal I will make for the day cut and in order, put in fridge for when it is needed. As you know, then when it is time to cook it is so much more rewarding and fast as the prep is all done. Do you ever lightly butter your buns and bread before toasting? I do it's faster and adds a little richness with the butter, although light. I also have a sink ready and I clean as I go. Did that in the restaurant too (small restaurant) Love it. I would love to have a Japanese knife like that. My mom recently became disabled from a brain disease , so i've been learning how to cook from her for my family. Having a knife like that would be really nice, especially considering i have chronic injuries to both of my wrists. I enjoy watching your videos in bed at night to help me relax.

Can you occasionally tell us what ingredients you are using to cook, for example a drawer under the griddle has chopped items but I am not sure what the are. The same with the cold items in the sandwich prep unit.

Something about seeing someone who's dedicated, diligent and skilled at things a lot of us take for granted creates riveting content oddly.
