People don't understand that the oil is the only thing stopping the food from burning and sticking to everything. People always underestimate how much fat is needed as well. Watch people home cooking and they never use fat or a drizzle and the food they're cooking always looks terrible, it's either unevenly browned or burnt or both. The fat is not the thing most likely to kill you its sugar.

It all depends on the oil used. Olive and avocado good. Everything else bad. Real butter or fat is also acceptable

My father owned a restaurant in LA and I cooked for him from 4Pm to 8Pm. I know the struggle personally. I would make hamburgers, potato knish, Reubens, Schnitzel, and salads. My favorite was eating a Matzah ball soup and corned beef or pastrami sandwich. I would personally not do it again since it's a ton of work. I enjoy your videos and wish you well.

Your killing it bro, I have been watching your videos for a few months now and your vids hit. They remind me of my earlier days in the kitchen working 2 jobs morning and night. I'm a fellow cook myself have been doing it since 2007. I remember my first brunch on the line shit was nuts I thought I'd never get out a live lol and after a couple months of doing it things start to fall into place and the flow comes naturally. Just a quick suggestion my friend... Whenever you prepare French toast... You dip your sliced bread into your refrigerated Egg Mixture... And you always discard the right hand latex glove... After it's had some of the Egg mixture on it from you picking it out with your gloved hand... Wouldn't it be much easier and more economical to have a small pair of kitchen tongs... That are kept permanently in the metal dish containing the Egg mixture... Then all you need to do is lift up the tongs... Place a slice of bread into the Egg mixture and push it down using the tongs... Before grabbing the dipped bread back out of the Egg mixture using the tongs... And then placing it on the griddle to cook... Then you won't have to change your right hand latex glove at all my friend... 👌 It's just a thought buddy. 👍

I like how you change gloves when needed! Hash browns need quite a bit of oil, they seem to absorb it more than one would think. Happy birthday! I always think about you being a lawyer. I've worked as a short order cook. Hardest type of cooking you can do in the industry imo. Line cooking is a breeze compared to short order. I love the fact you care about the health of your customers, keep using as many gloves as you need to. Love your videos you do a great job so keep it up!

I worked on my birthday that was october third. It was fun telling our new food and beverage director so that he had to be nice to me...haha. i'm the one always making a mess at my station. The thickness of a pan makes a big difference. I don't think cheap walmart is a good solution. Have you read the book Food Lab yet? It goes into the science of how the heat is transfered when cooking. I love that you put english and spanish captions together, I'm advanced learning spanish.

No you don't waste gloves. I use a lot of gloves, too, in order to keep from mixing foods not intended to be mixed and to keep the plates less oily when I handle them, and to help avoid plates slipping out of my hand - with an order on the plate !!LOL Nice watching you work.
