How to boat restoration: removing varnish from a boat with a heat gun

How do I protect gelcoat that is next to the wood where I want to use the heat gun?

Hello Paul I would use a piece of Ply as a heat deflector. Keep it perpendicular between the gelcoat and area being heat gunned. I will also keep that deflector 1cm away from the gel coat, as you can then easily remove the left over 1cm of varnish/paint with a small chisel. Hope this makes sense.

Epoxy is a pregnating resin and depending on the thickness, you should be able to heat gun it. It will be able to remove some, but there will be a need for proper sanding.
