Brewed this last week. Let the pressure build up naturally so hoping I didn't suppress the esters. I thought Adam advocated for fermentation under pressure. Anyway, looks great, looking forward to my turn. Haven't had much luck with this style in the past.

It’s certainly not going to ruin the beer either way tbh, I’m not sure we actually talked about pressure fermentation with Adam so he may have a different take on it

Just kegged this beer, altho changed the dry hop 60g mosaic, 60g cashmere and 60g simcoe. Sample tasted amazing! Looking forward to hearing about the spectrum and incognito neipa!

Awesome! I hope it comes out as well as the sample suggests! Been recording with the MM lads today for the tasting of the spectrum beer and lets just say it went down very well 😁🤪

I kegged my version of it yesterday, was virtually exactly the same as your recipe [ingredients] except I inadvertently measured out 80g of Simcoe instead of Amarillo for the DH, so have kind of already done some experimenting in regards of trying different hop combo's. Tbf my beer looked exactly the same colour as yours but wasn't quite as hazy as i expected, smelled very nice but will have to see how it turns out in a couple of weeks...cracking vid again btw

Thanks Adrian, no pressure initially but I did put it under pressure for the dry hop stage

Hey Tricky Quick question for you, what is your dry hopping technique? Every time I dry hop through hop bong or just through the top 14-16c the pellets just drop straight to the bottom. Pressure ranging from no pressure to around 5psi Any suggestions to why this could be happening?

Not sure why that is happening exactly, I have never used a hop bong so no insight on that, personally I release pressure and pop the lid or use the hop port on the snub nose to add pellets, this tends to release a lot of co2 out of suspension which seems to hold the pellets on the surface. If I put it back under full pressure this will tend to send the pellets down to the bottom of the fv so I will usually purge gently and then add no more than 3-5 psi top pressure, normally some of the pellets still sink but when I come back to it after a while the pellets have broken up and are mostly floating on top of the beer. Just wondering what process dis you use in order to dry hop. You mentioned that you dropped temp to 14C I believe. Did you have your hops already in suspended by magnets? I've never had mush luck with magnets. Always drops on me too early by the hops either being too heavy, or the krausen gets up there and soaks them and makes them heavy.

I don’t worry too much about oxygen ingress during dry hopping tbh, I just chuck them in as quickly as possible and purge the headspace thoroughly afterwards. Haven’t had any issues as a result. Temperature dropped to 14 prior to adding the hops, hold at 14c for 2 days max and then cold crash and package

Do you ever rouse your dry hops? Or do you just leave them floating on top for 48h then cold crash? How long do you let cold crash before packaging, ie how long on dry hops in total? Ive tried rousing and even just once sometimes gives me really bad astringency, but also not sure if just leaving them floating gets best extraction so not quite sure what to do! Cheers

I’ve done a video on setting up a hop rouser for the all rounder, it seemed to work well but did I notice a big difference using it, not really! Most of my beers I don’t really bother worrying about it, I just stick with 2 days at 14c then cold crash usually for at least 2 days but I try to not leave it any longer than 3-4. The little filter widget for the dip tube can help avoid blockages from the loose hop matter but it does slow the transfer a bit, its only really a must for heavy dry hops

Looks like a banger that has to be brewed or at the very least use the base recipe. I have 300g of Strata that I want to see shine in a base like that 🍻🍻

Bitterness on back end doesn’t sound right given no bettering addition was done. Did you maybe not acidify your sparge water and have leached grain tannins?

No just very light bitterness from the hops here, I’m using 100% RO so there is no need to acidify sparge water.
