Cheese sauce put into squirt bottles hold the extras in the coolers and just put in the steam bath to heat up easier to dispense and clean than a pump

Planning on buying my first cart sometime in 2020. Retiring to Florida soon then doing this part-time. I so appreciate all of Ben's videos! He is the man! I would like call him on one thing that he mentions a couple of times in this video. I've owned two restaurants in my lifetime. Just recently sold a 100 seat bar and grill that I owned for eight years. I can tell you as absolute fact that if any health inspector sees you adding cold chilli to the hot chili in your steam table they will blow a gasket. I know this because I got popped by the health department for doing exactly that, and I knew better. What they want you to do is thermalize your cold product to temp. Once it's warm, you can marry the products but not until then.

Some don't care and some do, but according to Food Safety guidelines, you are 100% correct.

Yeah as far as my training that sounded suspect. I think better to have open spot for an extra pan and just use a new pew-portioned pack and wait. Got to time it to use old, and I dont think and issue with using the last of the old and the new as long as from their own pans.

I'm old so I use mason jars to split up my #10 cans for all my condiments including the chili and cheese and just take a few of each with me every day in my condiment cooler. I use 1/6 pans for the chili and cheese, 4" deep and probably only fill them half way to start the day and just add a little here and there if I feel like I'm running low. I offer Nachos on the menu and use more of both the chili and cheese for that than I do for the dogs, but like Ben said just add more and it'll heat up pretty quick. My inspector caught me cutting an onion on the cart one time because I ran out and he was like, "come on now you know your not suppose to do that" .. I said "yes sir I know, but I ran out"! ... that was the end of it lol He wasn't even there to inspect me, but stopped by to say hi and hang out. He loves to talk and I love the interaction with me and my inspector. If you get one that likes to hang out and just shoot the shit with you ... go with it and get to know him or her. It'll help you in the long run! edit: I always have a cutting board, good knife, and stock an extra onion in the bread box every day just in case! I'd rather have the inspector mad at me than have customers get mad and refuse to buy because you don't have onions left!

A good friend of mine uses four small cans of rotell to one 10 can oh Hornell no beans and stirs it together brings it to temp and folks line up and I mean line up.

As a former thirty yr food service director this is what I'm going to do. Copy labels List all ingredients Then put in a plastic sleeve in a binder. If someone asks let THEM look because they know what they're looking for. Have them step aside if you have a line. One and done!

I tried putting 3 1/9 pans in my 1/3 pan but they won't fit correctly? Am I doing something wrong?

Did you watch the 3 videos I've made on that? www.learnhotdogs.com/bonusvideos It's free. The short answer, different manufacturers of pans make different sizes and make them to fit but then make the lips too thick or too extended and bam, you can't use them. But from what you're saying, that wouldn't work anyway. 3 1/9 will fit where a 1/3 size pan goes but not in a 1/3 size pan.

I've been binge watching your videos and I'm getting there :-) Wherever I read that 3 1/9 would fit in a 1/3 I missed that it's the plastic ones that fit. I tried those today and they slipped right in!
