It looks like a maslin pan. Some of them come with lids. If you Google them you will see lots of entries. And yes you can cook tomatoes and make jams/jellies in these pans.

I make lots of pickles. Both sour and sweet. I always add a grape leaf to each jar. The tannin in the grape leaf keeps your pickles crispy.

you should say how long to keep them before you eat them. my dad took my moms receipe to a gal at work. she came back about a week later taking of how disappointed she was, hers didnt turn out! dad told her she had to wait more than a week!

If you want these to be shelf-stable, yes, the hot water bath is essential. It seals the jar, forcing the air out of it. This allows the jar to be stored and is safe to consume later. Once a jar has been opened, it should be stored in the refrigerator.😊

You can make refrigerator pickles with just one jar. The brine ratio is a bit different, and they must be stored in the refrigerator.

I have seen other people cover the jars completely, in the water bath... covers the whole top...what is that all about? I just watched your canning for Beets, from 10 years ago! and you covered your jars in the pot on the stove, about an inch over...just curious!

He didn't include the complete clip of loading the jars, he cut it off after just a couple. When loading that many jars, I am sure the water came up over them at the end. It is always important to have at least an inch of water above the jars, otherwise they will not be safe.

Yes, you are correct! The volume of the jars displaces the water, eventually coming 1-inch above the lids. ALWAYS make sure the jars are completely submerged in the water bath.

If you cut off the blossom end of the pickle to prevent the pickle from getting mushy, how come when you buy pickles from the store, the pickles don't have the blossom end cut off?

Hello! That’s a great question. I think there are a few reasons. When pickling whole cucumbers they are usually picked at a small/younger size and don’t have as much of the enzyme. Also store purchased pickles have more preservatives that helps them stay crisp!

If the dill pickles with lots of garlic are not snapping and sizzling with cloudy brine and so sour they make you pucker then they are not the proper dill pickles for me...I also drink the pickle brine,especially good in caesars...

Look up a giardiniera canning recipe. You do not need to include all the vegetables. The important things are the brine and the canning time.

Each altitude can require a different processing time. I’m located between 0 and 1,000 feet above sea level. If you are at a different elevation, make sure to check the USDA Canning Guide for your processing time for pints Elevation 0 to 1,000 ft 10 min. 1,001 to 6,000ft 15 min . Over 6,000 ft 20 min.

Canning will discolor whatever is canned. Garlic can end up looking bad, but it isn't. It can even end up a turquoise color! I've never had that happen, but it is possible.
