They're holding the rod upside down, right? WTF.

They're using the reel primarily as an inline, which has little to no line twist. They have the reel rigged on a long rod and drop the bait vertically down the tree. They set the hook, maybe reel a little, then swing the fish in. They sometimes flip the reel upside down based on preferred line handling. You can see in many shots that they use their other hand to manage the bait position relative to the fish-just some specialized and unconventional rod/reel handling by crappie pros.
