Thanks so much for this video. I have spent a lot of recreation time at and around the river from Loxton right through to Tailem Bend and Love the Mighty Murray greatly. Being there gives me a sense of peace and the beautiful scenery is second to none, well in my humble opinion. As I intend on making a river change and finding and making a home near there in the foreseeable future, I thank you once again for your wonderful contribution to the river & community in educating the public on clever methods for using the plentiful supply of carp. It's a really valuable resource that I will be benefitting from. Excellent Work! 5 stars :-D

I've always wondered, how someone I was made aware of had prepared such a beautiful meal out of what is otherwise known to be something that tasted like mud... Thanks for helping us get a meal on our plates for cheaper ;)

My understanding was that due to the fact that fish is a bottom feeder is accumulates cyanobacteria which cause geosmin to build up within the flesh. This is responsible for the 'muddy' taste (also seen in yabbies). I was told by a fish farm manager that you can purge the fish in 3 ppm salty brine water (alive) for a week to remove all the muddy taste. This is a traditional dish from where my folks are from (Poland) in winter. Would also explain why it is harvested in winter (no phytoplankton).

People forget that the reason Carp exist in the USA and Australia is that they were introduced as a food source. That being said, I've never tried them, but knowing they are a massive problem here in Australia (they have ruined fresh water fishing in our largest river), it's good to know that they are in fact edible. I might have to try cooking some up in future, cheers for the highly informative video :D

That recipe looks considerably more tasty than the old "carp on a board" recipe we've all heard about. I always throw these critters back when I catch them, but I'm just gonna have to fry up a couple of them and give them a try. Thanks for the good info!

Her in the USA carp are a Nuisance Fish, however you correct in saying they are great to eat. In the Midwest it is hard to find a restaurant that does not serve carp. As long as you know how to prepare them you will not be disappointed. Thanks for the video my friends.

Good video! Thank you for sharing! Back in the 1960's I remember reading an article in the Field & Stream magazine about how to catch, clean, and cook carp. When he was talking about you had to remove the dark strip of meat that it wasn't good to eat. I didn't realize that it was that large of a strip. Yeah, he said that he had family and friends over to eat and they would comment on how good the fish was and would ask him what kind of fish it was and when he would tell them they couldn't believe that it was the lowly carp. Have you ever tried to soak it in water or vinegar water to draw out the blood?

how do you prep the skin? great video. you can salvage more good meat if you learn to "score" the carp. scored, breaded in seasoned flour and cornmeal, deep fried with the scored part dropped in down=good eating

Great video. I've been researching different carp recipes and cleaning techniques for awhile, and it's hard to find good articles/videos because everyone stereotypes it as a garbage fish.

Hi heres a tip. Prep up some fillets or cubed carp then sear to 1/2 cook then put aside. In a saucepan gently 1/2 fry crushed ginger and garlic then put aside. Dump into sauce pan 2 or 3 tins of chopped tomatos with a few chopped fresh tomatos then stew to reduce a little. Add a little brown sugar to reduce. When tomato is stewed well cooked then throw in the ginger and garlic to cook off then the fish. Add salt to taste. All elements unmeasured. Serve over rice.

We share the same advocacy. We are promoting selective fishing or angling here in Bicol Philippines. Carp is a local fish delicacy here in our place. But due to massive fishing ,some locals use batteries to electrecute them before catching it, affecting other fish species. I hope you could allow us to link your channel in our channel, too.

I love this video. North America is facing the same dire future. Our succulent native fishes are most likely to be largely out competed. Very sad. But if we learn to cope now we may slow their progress

My aunt told me that joke when I was a teenager... I caught a huge carp once and took it to the market and sold it for $4. (not per pound but the WHOLE fish). At the time I was getting $1 a pound for catfish fillets. The eighties were a long time ago!

we use to catch 40+ ponders coming out of the great lakes. Clean the mud vain out and brine them for a day or so, slowly smoke them in a decent smoker. MMMMmmmm!

Everywhere in the US.Yes they are "invasive" in that they were introduced as a food source in the late 1800's. They are easy and very fun to catch. 1. Get can of whole kernal corn 2. Throw out 2-3 handfuls in the area you plan to fish. 3. Bass fish somewhere away from your chummed area for 30-45 min 4. Put 5-6 kernals on a #6 bait holder hook with a small splitshot sinker on the line 5. Cast into the chummed area and hold on! DO NOT set your rod down or it WILL get pulled in. 6. CARP ON!

@Peter Hanrahan nobody is fishing them here. they dont even know what they are most of the time. i found one that got dumped in the bush on time, and another time i caught a big one and it broke my line after i saw the scale and color of it. i only found out about them myself after searching online about what kind of fish it was.

1:22 you say its the histamine that is secreted that make the fish taste "muddy" can i kill it before i freeze it in my cooler? if its not alive anymore it can make histamine is that correct?

@Peter Hanrahan found out the histamine isnt made in the fish from stress, it appear it is the result of the fish rotting because people dont chill them enough in the field. fertilizer? man, that part is what the BEST soup in the world is made out of. fishermen's soup from Serbia or Hungary. also, the part with the many little bones is also usable, you just have to leave skin on (with the scales and mucus removed) and make small cuts from the other side in right down to the skin like 3-4 millimeters apart and deep fry the fillet after dredging in flour.

The white meat with Y bones in it can be cut into one inch pieces, pressure canned, and it tastes exactly like tuna. It's magic....the bones seem to disappear. Of course, you have to catch the carp in clean water. The red meat, I use as catfish bait.

OG Luke No koi has chemicals to give it beautiful coloration and as such it is recommended that you refrain from eating them. Anyway why would you eat an ornamental fish.

I caught a 12lb carp in a lake area near my sister's house. My mom and I go fishing there quite often. A guy was there observing our fishing as well as a crowd of kids. Anyway, the guy told me to throw the fish back because it was not good for eating. I asked if why was the fish inedible? His response was only that the fish eats the grass and muck at the bottom of the lake. I thought so what? It wasn't like the fish was poisonous! I've eaten carp before & thought it was delicious too!

I think in the midwest they serve Buffalo Carp, which aren't really carp at all. The fish in this video are common carp. Not completely sure, though. Check out the wikipedia entry for Ictiobus or Buffalo fish.

if you clean the fish well remove the blood line and smoke the entire thing at at least 150 degrees for 2 or more hours you will find that the smallish bones disolve and can be shewed thru with no issues at all. Sheep Nose can be prepared the same way. I have had people tell me they would rather eat smoked sheep nose than Walleye fillets

So strange to see it from Central Europe how people taste carps and they are afraid of the experience. Here we eat carp oftenly, even its on the table at christmas because we dont have sea and carp soup or fried carp is the most common fishfood what we have.

No, not really. I know that their are many invasive (and dangerous) silver carp, bullhead carp, Asian silver carp, or whatever your preference to call these fishies in the Midwest and South. I do not know if their are any good carp to fish/eat in the Northeastern states, and whether or not they are invasive, and go the way of the goby (killed when caught). I think their are some wild goldfish (Bred from Prussian carp, I think), possibly some bottom feeder carps.

People lack of knowledge on oragnic food and animals leaves me dumbfounded. Carps are over populating because noone catches them, and when they do they dont even know how to prepare it, but its a fish so do what you would do to any other fish to the carp lol

Actually the most humane way to kill an animal is a hard strike on the head, this instantly knocks it unconscious, and because the strike way hard, inside the brain it bleeds and the animal never wakes back up, it thus has an instant death. Freezing an animal alive isn't humane, it's a slow death. You want to strike it quite hard with a metal rod a slight distant behind the eyes, this destroys the brain almost instantly. Then you throw it into the Esky. BTW it's not covered in this video, but you can eat the rest of the fillet also via deep frying it, deep frying makes the bones go soft and edible, allowing you to eat the rest of the fillet.

I like the idea of using icy water after to humanely kill the fish, but I’m not sure if the one he used was dead, because I noticed once he commenced cutting into the fish the mouth was constantly moving. 😩

put it in a 5 gallon bucket, cover with water and seal. Set AWAY from house and let is sir for a couple months. Filter out the solids and pour on your garden before watering.
