Not gonna lie, Hello Fresh got me through quarantine. I struggle with planning tasty nutritious meals under regular circumstances (thanks, poor mental health), and knew I was going to struggle with the added stress of people and rationed supplies. Now we are almost back to "normal" here (Australia), I had to stop because I wasn't even making the actual meals any more. Too many steps and stress and not enough time to just wallow around the house. Full time work is hitting me hard, I guess. I still have a tonne of "meal prep" in the freezer from making 3 family sized meals per week for just myself though; it seemed easier to only have to cook 3 times a week to get 12 individual meals rather than cook meals for 2. I didn't label anything, so it's always interesting to see what is defrosted that day. I have like 50 packets of stock cubes, rice, pasta, bread crumbs, seasonings and cheese/aioli/sauces left over, and probably donated about the same number of fresh tomatoes and mixed gourmet lettuce leaves to my work because I have the palate of a 5 year old.
