Ooh! I would love to see Ro film a video where she takes us along her process of creating a recipe for her cookbook, or just perfecting a recipe she wants to tweak. It would be so interesting to see where she starts with a recipe and what she changes and what she does to implement those changes! It could be filmed over the course of however long it takes to get the recipe just right and done sort of vlog style!

This feels like a very Indian inspired dish. All India vegetarian dishes feel so heavy and full

Indian food and Mexican food do use similar spices in different proportions. If the proportions in the Indian food are off, it'll taste similar to Mexican but one off. I learned that from my mom and the hard way lol. Still tasty though. :)

If your indian foods taste heavy and dull, switch to another/better restaurant. Indian foods can sometimes taste heavy (although adding raita/chutneys should fix that), but "dull" is a red flag there lol

I've been in a bad place mentally recently. I got to work today and set up my laptop. When I clicked on google I saw Ro's video pop up on my list of vids to watch and instantly my mood was better. Wow this was my first time watching. My favorite is when you say that you go by your heart when measuring the salt and pepper. It's what I do, but in my case it's more of a situation of "I have no idea how much I need or want, so I hope this works." Lol It was a very cute presentation, I can't wait to make these tacos. I made this for my family yesterday but substituted the vegan sour cream with regular sour cream as we are vegetarians and they absolutely loved it.
