Shun girl here. My Shun chef’s knife was a gift from my son who’s in charge of sharpening the knives in our house, and he keeps it razor sharp. He taught me how to grip the knife correctly, and to never cut on glass, marble, or plastic cutting boards. I’d love to have the chance to compare the two knives myself. This Misen knife looks good for less money. Nice review. If Roger needs any pointers on sharpening, I know a guy. :-)

Your video was very informative and I truly appreciated it. I have a set of Forschner knives that someone bought me about 8 years ago and they need sharpened. I didn’t know about not cutting on glass boards luckily I don’t have one. I would love to see a video on how to properly sharpen knives and how to treat cutting boards as mine do not last very long. I want to try this knife and see if I like it more than the ones I have!

Hi Urvashi, I highly value your opinion, so I chose to watch this video. Despite having a drawer full of knives, many of which are useless, starting from the high brands to the cheapest ones that I own. To be truthful in my house there's one knife that I and my husband prefer using which probably only cost me $12 and thus far it has been loyal but needs frequent TLC i.e sharpening. Most of my cooking requires thin cut slices so I hope Santoku knives won't disappoint me but delivers what it promises.

Wow! I learned a lot. I have one knife that I use for most everything. I most have a bunch of junk knives and due to arthritis in my fingers I suppose this is why I use just a certain one. I think one like this might work for me. Thank you for your review!

Thanks for another helpful video. Nice to know about a quality knife option. Almost chuckled at being asked to do ASMR videos. The things that draw me to a knife are quality material, sharp (I know - sharpen it), full tang, and a nice weight. Looks like this one checks off the items on my list. I'll admit, the Shun's are all that and beautiful too. My pocketbook keeps me from caving to temptation. :-)

The husband buying the Shun knife = heart attack = my experience exactly, but know I am a complete convert. We have some at our regular home and at our weekend condo, too. They're so amazing. Super precise and well balanced. Thank you for explaining the difference between sharp and good--it's our responsibility to keep our knives sharp for maximum performance. It's good to know that there's a great alternative to Shun at half the price.

I wish I saw this a few weeks ago. I loved my Santoku knife but when we sharpened it, it broke. It has since been replaced. I am looking forward to your video on sharpening also. This is a great video and explains why I love my Santoku!

I have CUTCO's as well, but these knives are smooth cutting edges , cutco's are all serrated ! Sometimes you need a smooth blade for cutting. Serrated blade cutting turkey will shred the meat .

I don’t actually have any high quality knives, so this was informative to me. Also on why I love my chef’s knives so much. Even though they were super cheap, they have a full tang and are well-balanced, and they keep their edge well enough. The scales are plastic, though, and cracking, so they should be replaced soon. Now I know a bit more of what to look for. I like both santoku style and chef style, for different applications. So it looks like hubby will be getting me 2 knives soon. ;) :D

Nice review. I found it amusing how you rightly pointed out that out of the box sharpness wasn't the best demonstration of a knifes value, and your husband then felt obliged to show it's sharpness with paper cutting. The curve geometry of the blade is also not an issue limited to chef vs. santoku. Many Japanese knives have a distinctly lesser curve in the blade. So that people trained in "traditional culinary chopping" might not well like the shape of a Japanese knife. Personally, since I'm comfortable doing push rather than rocking chopping, I like the Japanese shapes. Labels like western or Japanese style are of course not written in stone, but I would describe the Misen knives as hybrid. Or somewhere between the two styles. One other thing you could clarify is that a full tang is not always a fully exposed tang. Your beautiful Shun knives for example are full tang but not visible. I believe one of the reasons traditional Japanese knives tend not to have exposed tangs is for balance. They are usually thin and light blades, so the handle also needs to be lighter. I've seen many glowing reviews for Misen knives, but I'm not buying them simply because I have enough good knives that I'm pleased with. And buying more than I have now, would be more like hoarding than equipping. If I was in the market for a knife, Misen would be on the short list of candidates.

I've been looking at this knife online for a couple of weeks now. It looks quite good in all the important areas. I'm looking for a smaller knife but not a classic paring knife as I prefer a serrated edge because I've never had luck cutting tomatoes with a paring knife.
