You can grill these whole without filleting and the meat falls off the bones. I scale them, cut the head off, and clean out the guts. Wrap it in foil with butter and lemon juice. Grill it for about 40 minutes. The bones are large so the meat comes off easily and the skin separates. My buddy I fish with doesn't even scale them. Since the skin comes right off you don't have to.

Thanks for the positive feedback. Sheepshead are an amazing food source. Arian:I'm not a biologist by any means, but I think several factors attribute to this particular fish not bleeding. These fish were on ice an hour or two which would coagulate and clot most blood vessels. Also I didn't get the knife into the gills or backbone where fish tend to be more vascular. I like to ice all fresh catch even if I catch it from my dock. It aids in blood control and it firms the meat ensuring a better filet. Hope this helps.

Great instructional video!! We catch a lot of sheepshead down here in SE Louisiana while fishing for other species. I never throw the decent sized ones back. It's the finest white delicate meat. I think I will be better at cleaning them now because of your fine video. Thanks!!!

I lived on Lake Erie and knew a guy who had an old laundry dryer and he would throw his yellow perch in with a handful of nuts and bolts and turn it on. This is how he took the scales off. LOL.

Beautiful fish. When I have more than a 1 person limit to clean (15/person in Florida), I use an electric fillet knife, specifically to get through the ribs. Those fillets are delicious any way you can cook fish. My family's favorite is to chunk it into cubes, and flashboil it in Zataran's crab boil, with butter for dipping. If it happens to be < 15 inches, I keep it whole, removing the scales, gills and viscera, pull out the dorsal and anal fins, stand it up on a cookie sheet, and bake it. Once cooked, the flesh effortlessly separates from the bone with a fork.

Almost like I do it. I don't cut the ribs out with the fillet. I come from the top and work the curved tip of the knife in strokes against the ribs and take all the meat off of the ribs while leaving them intact on the carcass. When I take it off the skin like you do, that is the last step. I have all the rib and belly meat and don't cut into the guts.

You lose your belly meat that way. Don't cut through the ribs. Go along the top of them and you'll have more meat, no contamination, and less steps.
