You probably discovered it already but no u don't use 10v with 5v strips u increase the amps if you want to connect more strips if its recommended is 5v1amp then just use a normal 5v2amp charger if low brightness increase amps not volts higher volta will burn the strip

When connected, the 2 LED strips are not in sync with each other. They seem to be independent of each other. Is this because the strips are different lengths? I want to connect 2 strips to be in sync with the controller for a bicycle wheel (2 strips on each side of the wheel).

But wont it effect the controller? More led strips draws more current and the controller just isn't made to hold that much current..... Correct me if I'm wrong

No. You actually need signal amplifiers so the controller reaches all strips. Also you need to feed power each 5 meters as voltage drops a lot. Maybe the controller can reach 10m but not much more as far as I know.
