Is it possible to get this smoker to maintain as low as 150? For resting briskets?

@@jleimb since it's a gas smoker, it will be quite challenging to make it go to 150°

What is your average temperature would you say? Mine is around 345 that maybe too high for ribs? What do you think. Getting better at this thanks to you.

Yes that too high i keep it around 275 or 300

345 is too high for ribs, 345 is good for chicken, wings, meatloaf, 300 or 275 is good for Ribs

My digital thermometer that i leave in the inside of the smoker with a probe is driving me nuts. It keeps me too aware of the changes from 200 to 255. Why is this hapening?

The top of your smoker is the hot part, and low rack of the smoker is the low temp

How about uneven burning of the wood chips with using only one burner?

Use one burner on now if you see no smoke then turn the first burner off and turn on the other burner on
