Mark, I really appreciate this video. I am about to purchase a new smoker. I had been tossing around the idea of getting an offset horizontal charcoal smoker or possibly a vertical. I am old school and know how to smoke on an offset with charcoal. But now I'm now leaning more toward a vertical gas smoker. Some of the best restaurant grade smokers in the world are built right here in Mesquite, Texas at J&R Manufacturing. They mostly run on gas and electricity but use wood as their source of smoke and flavor. And why not use a more stable form of heat in a backyard smoker like they do? The heat source is not providing the flavor, it's the chips, chunks, or logs you are heating up and smoldering! You can put anything you want in that wood tray. Why constantly battle trying to regulate the heat? In my household I don't have time to be running in and out checking a fire. I can just add some more smoking wood every 3-4 hours and check my temps while I am at it. Sounds like a more productive day to me. Thanks again and keep on 'queing!

I've got a master built pro 40". Not as wide as yours. It was a prize at work. Free is always good haha At the directions of many, I've added lavalock seals to it, added 10psi regulator with needle valve for lower steady temps, added grommets to side for my temp probes, and swapped out the fire bowl and put cheap grate on and use a 10" cast iron skillet (mine the fire bowl sits right on the flame) which allows for more smoke and less fire for my wood. Added bonus is if I turn mine to high with charcoal and wood in the skillet, it lights it faster than a chimney would.

I just got the Thermotemp XL and really appreciate this video as I could not get my chunk wood to smoke without removing the heat shield and place the wood pan directly on the flame. I bought some wood chip and was able to get that to smoke with the stock configuration but don't want to have to buy chip wood as I have plenty of chunk hardwood in my wood storage. What is the starter device you're using to get the coal and wood chunks to start smoking?

I've gas smokers for years without any complaint. I'd own a fancy vertical off set stick burner if one showed up on my doorstep but unless there was a compelling reason to use it like the guys were going to show up and drink beer for hours to watch the smoker smoke. Three or four hours is about as much smoke on meat as I want and that is what you can get on one cooking. Good job selling the gas smoker and I had meager success with my pellet smoker. Sold it and moving on....

The issue is on long cooks, you have to feed the smoke so much because it burns off quickly. I have seen videos where they converted the water bowl to a wood chip container. Seems you would want this minimal maintenance since you are using propane to give you constant heat for a long time.

In the end its all about how it tastes. Not how you get there. I'm with you 110%. The easier for me the better. I got both charcoal/wood and propane smokers. I do more with the propane smoker now. It's a set it a forget it thing. But my other smoker c/w now is strictly for sausage.

Hi Mark you are doing great. All new good gages are there to make wherever we do easier. I don’t agree on the absolutibility of the popular frase “The end justifies the means” but as long as your goal is accomplished, your Bbq meat is done the way you like, your family enjoys it and you have a relaxing time, man, that’s it.

Not hating on gas smokers, I just ordered one the other day and its supposed to arrive today. Its a 36" cuisinart vertical smoker. Got a legit thermometer coming in from amazon to replace factory one!! Got 2 racks of spare ribs i pulled out the freezer to defrost and pop this smokers cherry after I season it. I beem using my charbroil charcoal offset for like 7 years and when I dont have time to babysit it i want something i can set and forget to do other things.

I use almost no electricity and I've done a huge brisket once yrs ago in an offset smoker using oak firewood. Came out perfect but I'm liking that propane. Don't have to cut a tree down buck it, split it, stack it or dry it. I feel the same way about pellets for cooking as you. Why not just use OSB or plywood if you're gonna use pellets. Im loving the propane idea at my offgrid cabin. Thumbs up.

Thanks for being truthful about stuff. So after having a cheap off-set smoker ( 100.00) Brinkman, i just bought a Oklahoma Joe off-set rig. It's made well but i'm weary of fire management. It is a struggle to keep the fine line of "Good Smoke+ Bad Smoke! I just can't seem to shake that bad flavor. I've tried all flavors of smoke wood + even special ordered "Post Oak" but no luck! But i almost bought a "Master Built" propane when i was lookin' at the O J smoker. I read some mixed reviews on it, but i'm thinkin' of selling the O J rig, too much work trying to keep temps up. I don't believe in "Set it + forget it but i thinking strongly of gettin' a propane rig. I used my old Weber grill yesterday in a indirect cooking way + guess what once you set the temp it stays that way. I did beef short ribs + they were great! Also i'm finding out you don"t need that much smoke to get the flavor. Like "3-2-1 method on pork ribs, 3 hrs is much too long i feel. Everybodys different! So thats my story + good job on your video.

Looks great to me. That's what brought me to your video - I was / am looking for gas smoker info. Seems to me gas would be easier - cheaper and it seems they are designed to add wood chips for the smoke. So, whats the issue? I see none.

No hate just would rather stay Old School on smoking meat. Grew up in Texas Bro. Smoking meat was and is a Family Tradition. Still like Charcoal and Wood Smoked Meat the best. Granted temp control is easier on a gas cooker. Its just not the same. The smoke ain't the same, taste ain't the same etc.

Thanks for the info. I liked it enough so that I decided to watch a couple more of your videos. I don't know what you do for a living but I think you would be great as a host or MC at a generalized man's talk show where folks get together and talk about everything from tools to toenails. One of those shows where you contribute on subjects that you have personal experience with or just host and then sit back and learn with everybody else. I don't know, maybe you are perfectly happy in your current vocation but either way, I hope good things come your way.

I am still new to this game and have a basic question for the community. Im using a similar smoker as in this video. I have 2 boston butts to smoke Should i do them both on same rack or use 2 racks. If i use 2 racks i think the top butt will drip onto the bottom one. Any help from the smoking community would be appreciated

Mark, my kids bought me a Masterbuilt propane smoker for fathers day and I just received it today. Now I am an old school smoker. I have been using a wood smoker for years and like you I would be all night just to maintain that heat. Well my wife and kids said I needed to change to this so I could enjoy things once we started eating and not fall asleep. Well I will be opening it tomorrow and getting setup to season it and start smoking. I also just purchased the electric charcoal and chip starter, ya know the blow dyer on steroids. Mark, did you have to use any seal for the door?

I thought you had a nice rural piece of property in the woods, but then the high speed cars, then the low flying jet! I'm researching which is better propane or electric and I am getting that the propane heat is too strong, the flame too hot.

pellets are fine. they are just extruded with high pressure. the natural resins from the wood make it stick together. you can also burn them in a smoking tube like incense. doesn't produce much heat but plenty of smoke for cold smoking things like cheese...

The problem I have with propane smoking is that you cannot keep the heat low! I've put my smoker on low, and it still goes over 300 degrees. Any tips for this?

Get an adjustable regulator for the top of your gas bottle to reduce the flow of gas to your smoker. Just make sure your flame is burning blue

You introducing oxygen with the blower. I do this all the time on any fire using my Dewalt blower. I connected my grill and my smoker to my free well gas. The cost=$0

I’m going to get me an electric vertical smoker. Plug and play. Many call them easy bake oven, but at the end of the day the meat will be just as delicious and will always be consistent. Old school is great, but takes too fucken long

I have 2 masterbuilt electric smokers. Digital electric smokers are pretty good at holding an accurate temperature. Most of them only go up to 270 degrees so they won't be any faster than a charcoal smoker. The only pain when using electric smokers is keeping a smoke supply. There are various ways to do it but it is something that you will need to add if you want to set and forget

That is a hot air tool used for roofing repair. You can get them on eBay 110 volt or 220 volt. I just bought one for the company I work for I think it's about $140. Pay close attention to the amount of heat that they are designed to put out cuz they make different models. The search would be "hot air tool for roofing"

wood pellets at formed by compressing wood at very high pressure. There is no glue. I would bet you can google it to know more.

Mark.... Deep down inside, haters are just jealous! LOL Can you get long term temps as low as 195 degrees? That's where ribs fall off the bone after 10 hours. And if that box can maintain temps that are lower, which one is that? Thanks!
